  • Lean Ground Beef: As the base of this dip, it provides a rich and hearty texture. You could use ground chicken or turkey too! 
  • Red Onion: Adds a slight crunch and sweet sharpness, enhancing the overall flavor profile.
  • Seasoned Black Beans: Infuse the dip with a creamy texture and earthy taste. I love the seasoned beans for added flavor.
  • Taco Seasoning Mix: Brings all the traditional taco flavors in one easy step. Use your favorite. I opt for a low-sodium seasoning mix. 
  • Cheddar Cheese: Melts beautifully for that gooey cheesiness everyone loves. A must for taco dip! 
  • Plum Tomatoes: Offer a fresh, juicy contrast to the richness of the meat and cheese.
  • Scallions: Provide a mild onion flavor with a hint of freshness.
  • Fresh Cilantro or Parsley: Adds a burst of color and a fresh herbal note to finish the dish. I don’t mind cilantro, but I don’t love it either, so I opted for parsley.

How To Make

This recipe is super easy to put together. I’ll walk you through it step-by-step below. I’ve also provided a full ingredient list and instructions in the printable recipe card below.

  1. Begin by preheating your oven to 375°F. In a 12-inch cast-iron skillet over medium-high heat, cook the ground beef, stirring often, until it is crumbly and cooked through, about 10 minutes.
  2. Add 1/4 cup of the red onion and cook, stirring frequently, until the onion is tender, about 3 minutes.

  1. Stir in the black beans, taco seasoning, and 1 cup water. Continue to stir until the beef is well coated, about 1 minute. Remove from heat. Mix in 1 cup of the cheese, then sprinkle the remaining 1½ cup of cheese on top.

  1. Bake in the preheated oven until the cheese is melted and lightly browned, about 25 minutes. Allow to cool for 5 minutes.
  2. Sprinkle the tomatoes, scallions, cilantro (or parsley), and the remaining ¼ cup of red onion evenly over the top.
