Begin by preheating your oven to 375°F. In a 12-inch cast-iron skillet over medium-high heat, cook the ground beef, stirring often, until it is crumbly and cooked through, about 10 minutes.
Add 1/4 cup of the red onion and cook, stirring frequently, until the onion is tender, about 3 minutes.
Stir in the black beans, taco seasoning, and 1 cup of water. Continue to stir until the beef is well coated, about 1 minute. Remove from heat. Mix in 1 cup of the cheese, then sprinkle the remaining 1½ cup of cheese on top.
