Ingredients

Before we’re ready to get into the kitchen and make these Peppermint Biscotti, let’s gather together the ingredients. Here’s what you’ll need:

  • Unsalted Butter: The base of our biscotti, unsalted butter adds richness and helps create that perfect, crumbly texture.
  • Granulated Sugar: It sweetens the biscotti just right, balancing out the flavors without overpowering them.
  • Eggs: Eggs bind everything together giving the biscotti their structure and a nice, delicate crumb.
  • Peppermint Extract: This is the star flavor! Peppermint extract brings a fresh and vibrant taste that makes these treats irresistibly festive.
  • All-Purpose Flour: The foundation of our biscotti, flour provides the necessary structure and chewiness we all love.
  • Baking Powder: A little lift from baking powder ensures your biscotti have the perfect texture, not too dense and not too airy.
  • Salt: A pinch of salt will enhance all the other flavors and bring out the best in your biscotti.
  • Crushed Peppermint Candies: These add delightful bursts of peppermint and a festive, colorful touch. You’ll use these in the biscotti and as a garnish. You can buy pre-crushed candies or crush your own candies or candy canes.
  • Semisweet Chocolate Chips or White Chocolate Chips: Chocolate and peppermint are a match made in heaven that adds a layer of indulgence to each bite. You can use whichever chocolate you like or do some in semisweet and some in white like I did.
  • Shortening: This helps make the chocolate smooth and dippable, perfect for coating the ends of your biscotti.

That’s it! We’re ready to get started.

Recipe Notes

Here are a few helpful tips to remember when making this festive biscotti recipe:

  • Room Temperature Ingredients: Make sure your butter and eggs are at room temperature before you start. This ensures that your batter mixes evenly, giving you a better texture in your biscotti.
  • Adjust Your Peppermint: Peppermint extract can be quite strong. Start with a little, taste your dough, and then add more if you want a stronger flavor. Remember, it’s easier to add more than to take some away!
  • Slicing the Biscotti: When slicing your biscotti, use a sharp serrated knife and a gentle sawing motion. If you cut them while they’re too warm, they might crumble, so let them cool a bit after the first bake.
  • Chocolate Melting Tip: When melting chocolate in the microwave, be sure to do it in short bursts and stir frequently. This prevents the chocolate from burning and ensures a smooth dipping consistency.
  • Handling Sticky Dough: If the dough is too sticky to handle, dampen your hands slightly with water or dust them with a bit of flour. This will make it easier to shape the dough into logs.
