Next, add the butter and sugar to the bowl of a stand mixer and beat until light and fluffy: about 3 minutes. Then, beat in the eggs one at a time, followed by the peppermint extract.
In another bowl, mix together the flour, baking powder, salt, and peppermint candy. Gradually blend this into the creamed mixture.
Halve the dough and form two 10x3-inch rectangles on a baking sheet. Bake at 325°F for 20-35 minutes until golden. Cool on a rack for 15 minutes.
With a serrated knife, cut each loaf into ½-inch slices and place them on a baking sheet cut side down. Bake for 10-12 minutes until firm. Keep an eye on these as they can easily burn.
Allow to cool on a wire rack.
