As the flowers bloom and Easter approaches, these truffles emerge as the perfect treat to celebrate the freshness and renewal of spring. Imagine the beloved flavors of spiced carrot cake mingled with the rich, tangy essence of cream cheese frosting, all encased in a silky white chocolate shell. Not only are they a breeze to whip up, but their inventive appearance makes them a standout at any springtime gathering or Easter brunch.

So what are they exactly? In essence, these are cake pops, but without the stick. That’s why I’m calling them truffles. If you’ve never made cake pops, they are easy. All you need is cake, frosting, and candy melts/chocolate.

It’s also worth mentioning that these Carrot Cake Truffles were prepared as part of my Easter Dessert Kabobs. I was inspired to create a rainbow-effect for these kabobs. Carrot cake made the perfect addition for the orange.

Before we get into the directions, let’s gather up all the ingredients you’ll need to make these adorable carrot cake truffles.

  • Prepared Carrot Cake: I used a box carrot cake mix (follow the package direction), but homemade works great too!
  • Cream Cheese Frosting: Adds that irresistible tang and creamy texture, binding our cake crumbs with sweetness and love. I highly recommend my go-to cream cheese frosting recipe.
  • Pure White Candy Melts: The secret to that smooth, snappy coating that makes these truffles look as good as they taste.
  • White Chocolate Baking Bar: Elevates the richness of our truffles, adding a depth of flavor that white candy melts alone can’t achieve.
  • Vegetable Shortening (Crisco): A little trick to ensure the chocolate coating is perfectly smooth and melt-in-your-mouth delicious.
  • Orange Candy Melts: Brings a pop of color and a touch of whimsy, making these truffles a feast for the eyes as well as the taste buds.
  • Carrot Sugar Candies (optional): These sugar carrot decorations add a playful nod to the truffle’s carrot cake origins and make each piece a work of art.

How to Make

Let’s get rolling! I’ll walk you through the steps below. I’ve also provided a full ingredient list and detailed instructions in the printable recipe card at the end of this post.

  1. In a large bowl, crumble the carrot cake with your hands. Using a spatula, stir in about 3/4 cup of the cream cheese frosting. Add more as needed. The mixture should stay together when rolled into a ball, but not be overly sticky.

  1. Roll the cake mixture into 1-inch balls. Set the cake balls on a plate and refrigerate until cool, about 30 minutes.
  2. In a medium bowl, add the white candy melts, white chocolate, and vegetable shortening. Microwave at 30-second intervals, stirring after each until melted.
  3. Dip the cooled cake balls into the melted white chocolate mixture and coat completely. Set on wax paper and allow chocolate to set completely.

  1. In a small microwave-safe bowl, melt the orange candy melts by microwaving them at 30-second intervals, stirring after each, until melted.
  2. Add the melted orange candy melts to a piping bag or plastic baggie. (Use caution if using a plastic bag. If your melted candy is too warm, it can cause the bag to break.) Cut a small tip off one corner of the bag and drizzle the melted candy onto the coated cake balls. Top with a carrot sugar candy, if desired. Tip: If you struggle filling piping bags, put the bag into a tall glass (tip down), then fill. It’s so much easier.

And that’s it!

Once the candy coating is completely set, pack and store the truffles in an air-tight container.

What can I use if I don’t have vegetable shortening?

Coconut oil is a great substitute. It helps thin the chocolate for a smoother dip, just like shortening does.

Can I make these truffles without a microwave?

Yes, you can! Melt the white candy melts and chocolate over a double boiler on the stove. Just keep stirring to avoid burning.

Ingredients

  • 1 prepared carrot cake* 13×9″ pan, no frosting
  • 1 cup cream cheese frosting my recipe is linked below
  • 1 bag (12 ounces) pure white candy melts
  • 1 bar (4 ounces) white chocolate baking bar roughly chopped
  • 2 tablespoons vegetable shorting (Crisco)
  • 1 cup orange candy melts I used a combination of orange and yellow.
  • Carrot sugar candies optional

Instructions
