Salted Caramel Popcorn Bars
Move over Rice Krispies treats, there’s a new snack in town! Let me introduce you to these Salted Caramel Popcorn Bars! I’m a fan of anything that contains salted caramel, so these bars were an instant winner for me.
I decided to make them after whipping up a batch of my Cinnamon Pecans and Walnuts. I folded the cinnamon nuts into the salted caramel and popcorn and it was a match made in heaven. If you’re not a fan of nuts, you can certainly leave them out, however, I love the texture and flavor that they add.
While I obviously recommend my homemade Cinnamon Nuts, any similar seasoned or sweet glazed nuts from the store will do the trick!

Also, once you’ve mastered this basic recipe, feel free to make it your own. You can mix in things like M&Ms, peanut butter chips, etc. You could add spices like cinnamon, nutmeg, or even pumpkin pie spice! There are so many possibilities. Have fun with it!
I think that these Salted Caramel Popcorn Bars make a delicious fall sweet treat, but you can certainly serve these any time of the year. I don’t think anyone will complain. Also, unlike a Rice Krispies treat, these have more of a soft, gooey texture versus a crispy, hard texture. You can clearly see this in the photo above where I’m pulling apart the bar. Look at all that goodness!

How to Make Salted Caramel Popcorn Bars:
Add the popcorn and cinnamon nuts to an extra-large bowl. Set aside. Grease a 9 x 13 baking pan with cooking spray or melted butter.

In a small saucepan over medium heat, melt the butter. When the butter is melted add in the caramels and water. For your convenience, I’ve provided a full ingredient list and step-by-step instructions in the printable recipe card below.
Cook while stirring with a silicone spatula until the caramels are completely melted. Add the marshmallows and continue to cook while constantly stirring. Cook until the marshmallows are completely melted and the mixture is smooth.
Quickly but carefully pour the caramel over your popcorn mixture. While stirring, sprinkle in the flake sea salt. Once evenly combined, or when stirring becomes difficult, press into your greased pan. (You can spray your hands with cooking spray to prevent the mixture from sticking to your hands while pressing.)
Let the salted caramel popcorn mixture set for 10-15 minutes or until completely cooled. Cut into bars and serve. Extras can be stored in an airtight container.

Salted Caramel Popcorn Bars
Ingredients
- 12 cups popped popcorn (1-2 bags) I used the Skinny Pop Sea Salt Popcorn
- 1 cup cinnamon glazed nuts** optional
- 2 tablespoons unsalted butter
- 10 caramel candies* unwrapped
- 2 tablespoons water
- 1 package (10 ounces) mini marshmallows
- 3/4 teaspoon flake sea salt

The popcorn goes all “wet and soft” how could anyone eat this? The idea is great and will try with rice cereal but popcorn is not crunchy at all. Waste of money which is sad.
Made these this afternoon for the grandkids for Halloween. Next time will add more caramels as it wasn’t enough caramel flavor for me. I am sure all the grandkids will love! Great recipe!
