  1. Begin by preheating the oven to 350 degrees F. Line a 10-inch (or 11-inch) loaf pan with parchment paper, then lightly spray with baking spray. Set aside.
  2. In a large mixing bowl add the butter, sugar, salt, and vanilla. With an electric mixer, mix for two minutes or until light and fluffy. Add the eggs, one at a time, mixing in between until well blended.

  2. Place the pan on a baking sheet and then into the oven. Bake for about 50 minutes or until a toothpick inserted near the center comes out clean.
  3. Let the cake cool in the pan for about 20 minutes. Then lift the cake out with the parchment paper and let the cake cool to room temperature on a wire cooling rack.

Recipe Variations

Here are some quick and simple variations to your peach cobbler pound cake recipe that can add delightful twists to this already scrumptious dessert.

  • Pecan Streusel Topping: Sprinkle a generous layer of chopped pecans mixed with a touch of brown sugar and cinnamon on top of the cake batter before baking.
  • Peach and Raspberry Swirl: Gently fold in a handful of fresh raspberries into the peach pound cake batter. The combination of peach and raspberry creates a beautiful flavor contrast and a vibrant appearance.
  • Almond Extract Twist: Substitute a portion of the vanilla extract with almond extract. This imparts a delicate almond flavor that pairs beautifully with peaches.
  • Peach Cobbler Muffins: Convert the recipe into muffins instead of a loaf. Fill muffin cups with the batter, top each one with a peach slice, and bake until golden brown.
  • Peachy Caramel Sauce: Drizzle a homemade caramel sauce over the cooled cake for an indulgent treat.
  • Boozy Infusion: For an adult twist, soak the peach slices in a splash of bourbon or rum before adding them to the batter. The alcohol will bake off, leaving behind a subtle boozy note.
  • Peach Cobbler Trifle: Slice the cake into cubes, and layer it with whipped cream and fresh peaches in a trifle dish. Repeat the layers and top with a dusting of cinnamon. It’s a stunning and delicious dessert for special occasions.

Remember, these variations are just a starting point—feel free to get creative and explore different flavors and toppings to suit your taste preferences and/or occasion.
