This Mixed Berry Fruit Pizza might be one of my new favorite desserts and will definitely be on repeat all summer long. I’ve been wanting to try a new way to make fruit pizza and this hit all the marks for me.

  • Frozen Puff Pastry: The base of your pizza, this ingredient brings a flaky, buttery texture that perfectly supports the toppings. I love using frozen puff pastry sheets. They make recipes like this one so easy! 
  • Heavy Cream: Adds richness and creates a luscious whipped topping when beaten to firm peaks.
  • Coarse Sugar: It’s sprinkled on the edges for a slight crunch and a hint of sweetness.
  • Mascarpone Cheese: Offers a creamy, subtly sweet foundation for the whipped topping. I recommend mascarpone here, but you can substitute cream cheese.
  • Confectioners’ Sugar: Provides a smooth sweetness to the mascarpone cream, balancing the tartness of the berries.
  • Lemon Zest: Infuses a fresh, citrusy brightness into the cream, enhancing the overall flavor profile.
  • Vanilla Extract: A dash of vanilla adds a warm, aromatic depth to the cream, elevating its flavor.
  • Mixed Fresh Berries: As the star of the show, they add a juicy, vibrant burst of flavor and color. I used blueberries, blackberries, and strawberries. Raspberries would be delicious too!

How To Make

As I mentioned above, this Mixed Berry Fruit Pizza is surprisingly easy to make. I know you’ll think so too! I’ll walk you through it step-by-step below. I’ve also provided a full ingredient list and instructions in the printable recipe card below.

  1. Begin by preheating your oven to 375°F. Line a baking sheet with parchment paper and set aside. 
  2. Next, roll out the thawed pastry on the parchment to form a 10 x 15-inch rectangle. Create a ½-inch border by scoring the edges with a sharp knife. Brush the border with 1 tablespoon of cream and sprinkle it with coarse sugar.

  1. Use a fork to pierce the puff pastry inside the border to prevent excessive puffing. Bake in the preheated oven for about 20 minutes until golden brown. Rotate halfway through for even browning.  Allow to cool on the sheet placed over a wire rack.
  2. In a large bowl, beat 1½ cup of heavy cream, the mascarpone, confectioners’ sugar, lemon zest, and vanilla extract using an electric mixer until it forms firm peaks. Evenly spread this mixture over the cooled pastry.

  1. Warm the jelly in a microwave for about 30 seconds to thin it slightly. Coat the berries evenly with the warmed jelly, then arrange them atop the cream-covered pastry.
  2. Garnish with fresh mint leaves.
