One bite of this peanut butter ice cream pie and you’ll be hooked. The combination of creamy peanut butter ice cream and crunchy Oreo cookie crust is simply irresistible. In my personal opinion, when it comes to the realm of sweet treats, there are very few combinations as heavenly as the marriage of creamy peanut butter and rich, decadent chocolate. And let’s be honest, peanut butter desserts are my personal favorite.

When I was a kid, my older brother used to take a bowl of plain vanilla ice, add a big scoop of Jif peanut butter and just mix it together until it was completely incorporated and super smooth. Of course, I followed in his footsteps and did the same. Thirty-something years later I still do the exact same thing. It is my favorite way to eat ice cream and hands down the BEST peanut butter ice cream I’ve ever had. And trust me, I’ve tried a lot of peanut butter ice creams; none compare.

So, this is basically a pie made with my favorite ice cream. And let’s not forget it’s in an Oreo crust. I mean…c’mon!

Ingredients

To make this decadent peanut butter ice cream pie, you’ll need to gather a few key ingredients. 

  • Oreo cookies
  • melted butter
  • creamy peanut butter (I like Jif for this.)
  • vanilla ice cream
  • heavy cream
  • instant vanilla pudding 
  • vanilla extract
  • confectioners’ sugar
  • fudge sauce and chopped peanuts to garnish

Curious about the vanilla pudding mix? I was recently talking to a baker at a local restaurant and she adds vanilla pudding to her homemade whipped cream when using it in desserts to help stabilize it. Such a great tip!

How To Make

Ready to try making this peanut butter ice cream pie? I’ll walk you through the process below. I’ve also provided a full ingredient list and detailed instructions in the printable recipe card at the end of this post.

  1. Begin by preheating your oven to 350 degrees F.  
  2. Crush your Oreo cookies into fine crumbs. (You can do this using a food processor or by placing them in a plastic bag and crushing them with a rolling pin.)
  3. Add the cookie crumbs to a bowl and pour the melted butter over them. Mix in the melted butter until everything is well combined.
  4. Press your Oreo and butter mixture into the bottom and sides of a 9-inch pie dish. Be sure to firmly press the mixture down to achieve a sturdy crust.

  1. Bake for five to seven minutes or until set. Allow to cool completely. 
  2. Place the ice cream in the bowl of a stand mixer. Add in the peanut butter and beat on medium-low until completely combined.

  1. Spread this mixture into the cooled pie shell. Place in the freezer. 
  2. Next, beat the cream and vanilla with an electric mixer on medium-high speed until it starts to thicken. Add in the instant vanilla pudding mix, then continue to beat while gradually adding the confectioners’ sugar. Beat until the cream is fluffy (medium peaks) but not too firm.

  1. Spread whipped cream over the pie. Return to the freezer for six hours or overnight. 
  2. Remove the pie from the freezer about 10 minutes before serving. Drizzle the top with fudge sauce and chopped peanuts. 

I know you’ll want to dig in right away, but that refreezing time is important. But, trust me, it will be worth the wait. You’re going to LOVE this ice cream pie. So good!

Recipe Variations

Once you have mastered the basic recipe for this dreamy peanut butter ice cream pie, the possibilities for experimentation are endless. Here are a few recipe variations to inspire you:

  • Chocolate Lovers’ Pie: Add a layer of chocolate ganache on top of the Oreo crust before adding the peanut butter ice cream filling. Top with chocolate chips, chopped chocolate, or even a drizzle of hot fudge sauce.
  • Peanut Butter Cup Pie: Fold chopped peanut butter cups into the ice cream base before freezing. 
  • Double Nut Pie: Swap out the Oreo crust for a graham cracker crust, and add chopped pecans or walnuts to the peanut butter ice cream filling.

Frequently Asked Questions 

Can I use a different type of cookie for the crust?

Absolutely! While Oreos work great for this recipe, you can use any cookie you like. Graham crackers, chocolate chip cookies, or even shortbread cookies would all make great alternatives.

Can I make this recipe ahead of time?

Yes! In fact, you almost need to. The ice cream will need time to set after assembling. Once assembled, simply store the pie in the freezer until you’re ready to serve it. Just make sure to let it sit at room temperature for a few minutes before slicing.

Can I substitute almond butter for peanut butter?

I suppose you can, however, I really like classic creamy Jif for this recipe. It results in the best flavor in my personal opinion. Feel free to use any nut butter you like, but keep in mind that the flavor and texture of the pie will be slightly different.

Can I use flavored ice cream? 

Absolutely! Try it with chocolate ice cream, Moose Tracks, Cookies & Cream, etc. Just be sure your ice cream flavor works well with the flavor of peanut butter.
