Snack mixes have been my jam this year. Not only are they delicious to eat, but I’ve also had so much fun making them and experimenting with flavor combinations that I enjoy.

I made two new party mixes for the holidays: this Gingerbread Chex Mix and a Peppermint White Chocolate Chex Mix (which I shared last week). Both are uniquely delicious. No matter which one is calling your name (or both), I think you’re going to enjoy them!

It’s really hard for me to pick a favorite between the two. I found myself craving a different one at different times for different reasons.

What I really enjoy about this particular recipe is the double whammy of flavor. First, the cereal gets coated with that fantastic gingerbread sugar and spice mixture before baking, and then the whole thing is topped off with creamy white chocolate. What’s not to love?

This holiday-inspired party mix is so simple to make, and you only need a handful of ingredients to put it together. Here’s what you will need: 

  • Corn Chex: Adds a classic, crunchy texture that’s a staple in snack mixes.
  • Cinnamon Chex: Infuses a warm, spicy flavor, elevating the overall taste.
  • Mini Pretzels: Provide a delightful salty twist, balancing the sweetness.
  • Butter: It’s the key to creating a rich, velvety coating for the mix.
  • Brown Sugar: Offers a deep, caramel-like sweetness.

How To Make

Alrighty! It’s time to make this Gingerbread Chex Mix. I’ll walk you through the process below. I’ve also provided a full ingredient list and detailed instructions in the printable recipe card below.

  1. Preheat your oven to 250 degrees F.
  2. In a large bowl, combine Corn Chex, Cinnamon Chex, and mini pretzels.
  3. In a small microwave-safe bowl, microwave the butter, brown sugar, molasses, cinnamon, ginger, and cloves, uncovered, for about one to one and a half minutes. Stir after one minute until the butter has melted and the sugar is dissolved. Pour this mixture over the cereal, tossing to ensure it’s well-mixed.
  4. Spread the mixture onto a parchment-lined baking sheet. Bake for 10 minutes, stirring halfway through. Keep a close eye on it, as it can burn quickly.

  1. Allow the mixture to cool.
  2. Then, stir in the gingersnap cookie pieces.
  3. In a small microwave-safe bowl, microwave the white vanilla melting chips at 30-second intervals, stirring between each, until melted and smooth.
  4. Transfer the melted chips to a piping bag or a small resealable food-storage plastic bag. Cut off a small corner of the bag and drizzle the melted chips over the cereal mixture. Sprinkle with decorative sprinkles.

  1. Let the chocolate set completely. Once set, carefully break the mixture apart and store it in an airtight container.

  1. We have always loved the original Chex mix with it’s salty sweet taste so I wanted to try this gingerbread recipe for my husband who loves gingerbread around the holidays.
    One thing to note is that melting chocolate to drizzle isn’t for the faint of heart. My chocolate never got to the drizzle stage so I ended up tossing it in the chocolate which wasn’t as pretty but still tasted great. I did the microwave, the double boiler and neither melted the chocolate well for me. I just need some practice I guess.
    Another quick note for those making this Chex mix is you need a very large cookie sheet or place it on several so the layers are single row. This allows the mix to crisp up and not just be soggy laying in the butter mixture. I also pulled the parchment away as it seemed to keep it from all drying up together as it should. My mix was in the 250 oven for over 40 minutes as I tossed it many times. Not 10 minutes as stated. Maybe if my cookie sheet were larger this would have worked for me. Tastes great though! I’d make again!
