Make your holiday gatherings extra special with this Gingerbread Chex Mix. This delightful recipe combines classic gingerbread flavors with the crunch of Chex, pretzels, and gingerbread cookies, all drizzled with white chocolate. It's perfect for gifting, party snacks, or enjoying during holiday movie marathons!
In a large bowl, combine Corn Chex, Cinnamon Chex, and mini pretzels.
In a small microwave-safe bowl, microwave the butter, brown sugar, molasses, cinnamon, ginger, and cloves, uncovered, for about one to one and a half minutes. Stir after one minute until the butter has melted and the sugar is dissolved. Pour this mixture over the cereal, tossing to ensure it's well-mixed.
Spread the mixture onto a parchment-lined baking sheet. Bake for 10 minutes, stirring halfway through. Keep a close eye on it, as it can burn quickly.
Allow the mixture to cool. Then, stir in the gingersnap cookie pieces.
In a small microwave-safe bowl, microwave the white vanilla melting chips at 30-second intervals, stirring between each, until melted and smooth.
Transfer the melted chips to a piping bag or a small resealable food-storage plastic bag. Cut off a small corner of the bag and drizzle the melted chips over the cereal mixture. Sprinkle with decorative sprinkles.
Let the chocolate set completely. Once set, carefully break the mixture apart and store it in an airtight container.
