This Tomato Galette is a harmonious blend of juicy heirloom tomatoes, and a bed of creamy honey-infused goat cheese, all nestled within a homemade pie crust. It’s simple, elegant, and unabashedly summer.

Ingredients

You only need a few things from the pantry and your garden to make this heirloom Tomato Galette. Here’s what you’ll need:

  • tomatoes (I prefer heirloom, but any will work.) 
  • flake salt
  • pie crust (homemade pie crust recipe or store-bought)
  • honey goat cheese
  • fresh chives
  • fresh lemon thyme
  • garlic clove
  • lemon zest
  • egg
  • fresh basil

How To Make

Now it’s time to put it all together. I’ll walk you through the process below. I’ve also provided a full ingredient list and detailed instructions in the printable recipe card at the end of this post.

  1. Begin by setting your oven to 375 degrees F. 
  2. Place your sliced tomatoes on a parchment-lined baking sheet. Sprinkle with salt on both sides and allow to sit for about 10 minutes. Then, pat dry with paper towels. (This will help remove excess moisture.)

  1. Prepare and roll out your pie crust on a lightly floured surface. You want it to be about a 12-inch circle. Transfer to a parchment-lined baking sheet.
  2. In a small bowl, add the goat cheese, herbs, garlic, and lemon zest. Mix to combine. Spread over the dough leaving a one-inch border around the edges.

  1. Top the goat cheese spread evenly with sliced tomatoes and fold the edges of the crust over the tomatoes leaving the center exposed. 
  2. Brush the crust with the egg wash, and then sprinkle it with salt.

  1. Bake for about 30-40 minutes. Allow to cool on the baking sheet and garnish with fresh basil before serving.
