- Preheat your oven to 425°F. Whisk together the eggs and three tablespoons of water in a small bowl.
- Dip the chicken cutlets or breasts* in the egg mixture, then dredge in the seasoned breadcrumbs, pressing firmly to adhere. Place the chicken on an aluminum foil-lined baking sheet. Bake for 15 minutes or until the chicken is browned and cooked through.

Full disclosure: I was lazy and just used my family’s favorite frozen chicken tenders. However, I followed the rest of the recipe to a tee and it was a huge hit! I’m vegetarian, so I added a chopped hard boiled egg to my bowl for protein. This is a great weeknight dinner that we will keep on repeat.
