Lately, I’ve been a bit obsessed with Wendy’s Chicken Apple Pecan Salad. For whatever reason it’s hitting me in all the right places. The ingredients are rather simple, so I decided to try making it at home. Turns out it is pretty darn easy and so much better. (Every now and again the convenience of fast food is great, but I’ll take a homemade dish any day.)
Now that I know how to make this salad at home, I enjoy it a couple of nights a week. Some of my other go-to meals include this Yogurt with Granola, Berries, and Honey for breakfast and this Hummus Sandwich for lunch.

Know that I’m using the exact bottled dressing that comes with Wendy’s salad. It’s Marzetti Simply Dressed Pomegranate Vinaigrette. I thought about trying to make a homemade version of this dressing, but the store-bought version is perfect, so I didn’t feel the need to create my own. Wonderful salad and beats Wendy’s. We also marinate and grill our chicken and make extra for this salad. The dressing is no longer available on Amazon or our area so making our own similar to Sarah’s.

I make a similar salad but instead of chicken it calls for diced salami and cheese. I sometimes use blue cheese. My favorite! I’m going to try this one since it’s probably healthier. I make my dressing using equal parts honey, red wine or pomegranite vinegar, and oil also a dab of dijon, a couple minced garlic cloves and salt and pepper. I add all ingredients into a jar and shake it up. So easy.
