Yes, my friend, I have another go-to recipe I want to share with you today: a hummus sandwich. 

I have been trying to be a bit more conscious about what I’m eating. You all know I have a major sweet tooth and this winter has gotten the best of me. Feeling a bit uncomfortable in my skin, I want to make some healthier changes and just be more aware of what I’m eating.

I was searching for healthy and low-calorie lunch ideas and came across this hummus sandwich made with just bread, vegetables, and hummus. It sounded delicious and seemed like a great way to get in a ton of vegetables, so I gave it a go. I was instantly in love and now I can’t stop making it.

Some of my other go-to ‘feel good recipes’ include my go-to green smoothie, yogurt with granola, and spinach salad

I paired my sandwich with some low-calorie popcorn, but you could do a berry spinach salad, tomato basil soup, pasta salad, etc. 

Either way, this hummus sandwich is easy, fresh, and filling!  Plus, I feel really good after eating it. It has now become a go-to lunch recipe and I look forward to making and eating it. I think you’re going to love it too!

How To Make

I’ll walk you through the steps for making this hummus sandwich. I’ve also provided a full ingredient list and detailed instructions in the printable recipe card below.

  1. Start by spreading a generous amount of hummus on two slices of your thin-sliced bread.

  1. Next, start layering your vegetables onto the bread. Be sure to spread them out evenly to ensure every bite is packed with flavor.

  2. Add a sprinkle of salt and pepper to taste. 
  3. Place the other slice of bread on top and give it a gentle press to ensure everything stays in place.

If you’re feeling adventurous, there are plenty of ways to tailor your hummus sandwich to your liking. The possibilities are endless! 

  • Add some crunch by including sliced almonds or sunflower seeds. 
  • Swap out the bread for a wrap or pita pocket.
  • Add some protein. You could top your sandwich with grilled chicken, deli meat, tuna, or tofu. A sliced hard-boiled egg could also be a great addition.

Can I use different types of hummus?

Yes, totally! I used lemon hummus which is a personal favorite, but you can definitely mix it up with different flavors like garlic, roasted red pepper, or even spicy hummus. I tried the sandwich with jalapeño hummus but kept going back for the lemon.

How do I pick the best bread for this sandwich?

Choose a bread that is sturdy enough to hold all the fillings without falling apart. I LOVE any of the thin-sliced loaves of bread from Dave’s Killer Bread. They are low in calories and big in flavor. 

Can I make this sandwich ahead of time?

Yes. Be aware that the tomato could add a little sogginess to your sandwich. To avoid this, you can scrap out the seeds. Since I work from home, I typically just have all of my veggies prepped so I can quickly make the sandwich when I’m ready for lunch or dinner.

How can I make this sandwich more filling?

If you’re looking to make this sandwich more filling, try adding some protein like grilled chicken, deli meat,  tofu, or falafel. You could also add more veggies or a side salad to round out the meal.

  1. This sounds delicious. I haven’t seen lemon hummus, but it sounds like the perfect hummus for this. A couple of slices of crisp bacon would add some nice flavor to this as bacon goes nicely with all of the veggies you used, which seem like the perfect line up for this sandwich. I would say I’m on board with your delicious lunch idea. Thanks!
