Crème Brûlée has always been one of my favorite desserts. I used to work in hotel restaurants, and I had my first taste at a very fancy spot—after that, there was no turning back. I don’t have it often, but when I do, it’s always a treat I truly savor. That’s what inspired me to create a bite-sized version of this beloved classic, and voilà—Crème Brûlée Tartlets were born.

These decadent little bites have everything you love about traditional Crème Brûlée but in a mini, crispy package, thanks to the phyllo shells. The shells add the perfect crunch, which pairs beautifully with the silky, creamy custard. I love the contrast of textures—it makes every bite so satisfying.

Surprisingly, the ingredient list for these Crème Brûlée Tartlets is pretty short and simple. Here’s what to gather: 

  • Egg white – Brushing the phyllo shells with a bit of egg white helps them crisp up beautifully in the oven, adding an extra layer of texture to the tartlets.
  • Sugar – Used in the custard for sweetness and on top to create that signature caramelized crust when torched.
  • Egg yolks – The key to a rich, velvety custard, egg yolks provide structure while giving the filling its classic golden color.
  • Kosher salt – A small pinch enhances the flavors, balancing the sweetness and bringing out the depth of the custard.
  • Heavy whipping cream – This is what makes the custard luxuriously smooth and creamy, creating that irresistible melt-in-your-mouth texture.

How To Make

It’s time to assemble. Let’s whip up these Crème Brûlée Tartlets. I’ll walk you through the steps below. I’ve also provided a full ingredient list and instructions in the printable recipe card below.

  1. Preheat the oven to 350 degrees F. Arrange the frozen mini puff pastry shells on a baking sheet and bake for five to seven minutes or until they are lightly golden. Remove from the oven and allow them to cool completely.
  2. In a medium bowl, whisk together two tablespoons of sugar, the egg yolks, and salt until well combined.
  3. In a small saucepan, warm the heavy cream and vanilla bean paste over medium-low heat, stirring occasionally. Heat just until steaming, but do not let it boil.
  4. Slowly drizzle about half of the warm cream into the egg mixture, whisking continuously to prevent curdling. Once combined, return the mixture to the saucepan with the remaining cream.
  5. Over medium heat, whisk constantly until the mixture thickens and reaches 175°F on an instant-read thermometer, about one to two minutes. Remove from heat.

  1. Spoon approximately 1½ tablespoon of the custard into each cooled pastry shell. (You can also add the filling, slightly cooled, to a pastry bag and pipe the custard into the shells.) Refrigerate for at least one hour or until set.

Make sure to slowly whisk the warm cream into the egg mixture to temper it gradually. Also, avoid overheating the custard—whisk constantly over medium heat and remove it from the stove as soon as it thickens.

Do I need a kitchen torch to caramelize the sugar?

A kitchen torch works best for creating that crisp, golden sugar topping, but if you don’t have one, you can try broiling them for a few seconds. Can I use regular vanilla extract instead of vanilla bean paste?

Yes, but the flavor won’t be quite as rich. Vanilla bean paste provides a deeper, more aromatic vanilla flavor and those signature vanilla flecks, but pure vanilla extract will still work well.
