There’s something undeniably special about homemade Coconut Macaroons. They feel like the kind of treat you’d only find at a boutique bakery, but they’re surprisingly simple to make at home. With just a handful of common ingredients, you can whip up a batch of these delightful cookies in no time. The chewy coconut, the sweet hint of almond and vanilla, and the rich chocolate come together to create a dessert that’s as elegant as it is approachable.

I decided to make these for Christmas this year. I thought they would be a fun addition to my Christmas cookie tray. I typically don’t have cookies with coconut, so I think they’ll make a unique and tasty addition.

Ingredients

It’s time to gather all the ingredients you’ll need to make these Coconut Macaroons.

  • Sweetened flaked coconut: As the star of the recipe, it provides a chewy texture and a natural sweetness that forms the base of the macaroons.
  • Granulated sugar: Adds just the right amount of sweetness to balance the rich coconut and chocolate flavors.
  • All-purpose flour: A small amount helps bind the ingredients and gives the macaroons their structure.
  • Salt: A pinch of salt enhances the sweetness and highlights the flavors of the coconut and chocolate.
  • Egg whites: Act as a binder and give the macaroons their signature light and chewy texture.
  • Vanilla extract: Adds a warm, aromatic sweetness that complements the coconut beautifully.
  • Almond extract: A subtle hint of almond enhances the overall flavor, giving these macaroons a touch of sophistication.

Frequently Asked Questions

Can I make these ahead of time?

Absolutely! Coconut macaroons store well in an airtight container at room temperature for up to five days. For longer storage, you can refrigerate or freeze them. If frozen, let them come to room temperature before serving to preserve their chewy texture.

How do I prevent the macaroons from sticking to the baking sheet?

Lining your baking sheet with parchment paper is the best way to ensure the macaroons won’t stick. If you don’t have parchment paper, lightly greasing and flouring the baking sheet will work.

What’s the best way to melt the chocolate?

The easiest method is to use a microwave. Place the chocolate melting wafers in a microwave-safe bowl and heat in 30-second intervals, stirring in between, until smooth. If you prefer, you can melt the chocolate using a double boiler for more control.

Can I use a different type of chocolate for dipping?

Yes, you can use dark, milk, or white chocolate depending on your preference. Just be sure to use high-quality chocolate or melting wafers as they melt more smoothly and create a glossy finish for dipping and drizzling.
