I’ve been very busy this year with my holiday cooking and baking. As I near the finish line of all the sweets I wanted to bake, I realized I didn’t have a peanut butter cookie in the mix.

As much as I love the classic peanut butter blossom-style cookies, I wanted something a bit different this year and these were the perfect substitution. In fact, I may even love them more than peanut butter blossom cookies.

One thing I want to mention before we get into the recipe is that rolling out and cutting a shortbread-style dough can be fussy. It may want to crumble and crack and the more you work with it, the trickier it can be.

If you’re in a hurry and running short on patience, I’d save this recipe for another day. I’ve worked with shortbread cookies before so I didn’t have any major struggles and the process was pretty smooth. (I mention this for any new bakers out there.)

  2. Michael,
I have found YOU as the BEST source hands down for Christmas cookies! I grew up in Pittsburgh (and I feel like I might know where you home is) and my mom and her friends would make 1.000 cookies to swap and gift to everyone from the mailman to the teachers at our school. Now trying to organize a cookie exchange is not easy as no one bakes anymore. So that makes me very popular! And your recipes are the best. Thank you!

  3. The majority of my family lists peanut butter cookies as their favorite, so I was excited to see this recipe. I tried it this afternoon and these are a hit! I’m making another batch tomorrow for our neighbors and then another batch for Christmas Eve for the extended family. Thank you, Michael!

Oh – I am also going to try your adjustments for puppy chow as well. A close friend introduced me to it a few years ago and I sometimes had the same experience with chocolate that you mentioned.
