I also couldn’t find ground chicken at my grocery store (Limited shopping is a disadvantage of living in a small town.), so I substituted turkey. To be honest, when it’s ground up and covered in buffalo sauce, I’m not sure I could tell the difference. You can use whatever you’d like.

I doubled this recipe and I’m so glad I did. These are incredibly delicious meat balls They have a nice spicy-kick to them as well, so be warned.

This recipe may also be somewhat healthier due to the lean meat and egg white instead of a whole egg. (To cut even more calories and fat, you could use less butter in the final steps.)

Instructions

  • Preheat oven to 400 degrees F. With a fork, stir together turkey, onion, garlic, egg white, bread crumbs, and ranch dip mix in a large bowl. Mix until just combined. This recipe will make 16 meatballs. Divide mixture into quarters, then make each quarter into 4 balls.
  • Press a cube of blue cheese into the center of each ball then form the mixture around cheese to seal. Roll into a ball.
  • Place meatballs on a non-stick sprayed cooling rack set on top of a baking sheet and then bake for 16-18 minutes or until cooked through.
  • Meanwhile, melt butter in a large skillet over medium heat. Then add buffalo wing sauce and stir to combine. Add cooked meatballs to skillet using a spoon to coat them with sauce. Place a lid on the skillet and turn heat to low to keep the meatballs warm.
  • Alternatively, you can finish the meatballs in a slow cooker like I did. Simply put the butter, buffalo wing sauce, and meatballs into a slow cooker and set on high for about 20 minutes or until warm.

  1. I am so delighted to have found your recipe and your website. Amazing! Made the meatballs tonight with ground Angus ground beef instead of turkey, and otherwise prepared them as directed, including the cooking time. So, so, so delicious. I could have put more blue cheese in for my taste, but absolutely fantastic and the Angus ground beef was cooked perfectly. I doubled the recipe and got roughly around 30 – next time I am going to have to quadruple it. Highly recommend this recipe and thank you very much!

  2. You can always grind up chicken breast in a food processor (defrosted & raw) to make ground chicken. I’ve tried it and it works perfect.

  3. Just wanted to let you know that I made these last year for my son’s superbowl party. He said they were gone in minutes. All his friends asked for the recipe. And just so you know, when I signed up for Pinterest a couple of years ago, you were the first site that was recommended for me to follow. Glad I did. I always get the best recipes and ideas from your site.

  4. I have made these several times, and I’m in the process of making them right now! I have to triple the recipe because they are just that good, even left over!

  5. It must be kismet! I was just looking at another recipe for buffalo chicken meatballs and got to thinking if I could stuff them with blue cheese. So I did a search on Pinterest and found you. I can’t wait to make them!!! Was also thinking this would be a fun twist in a meatball sandwich with some extra blue cheese or mozzarella on top!!!

    1. The blue cheese in this recipe tastes more like actual ranch than blue cheese! Mixed with the buffalo sauce it’s perfect!! If I used any other cheese it would be mozzarella.

  6. I just made these for the Super Bowl. They really are amazing. Thank you for sharing. I will have these listed in my “go to” homemade cookbook.
