Vanilla Pineapple Margarita:
This week on IBC we’re celebrating Cinco de Mayo. Yesterday, I kicked off this fun fiesta with everything you need to know about celebrating Cinco de Mayo. I also shared some Tuesday Tunes to add a little rhythm to your party.
Now we’re ready to dive into some recipes. Today, I’ll be sharing two takes on classic Cinco de Mayo cocktails. My first recipe is for a margarita, but I’m turning up the flavor volume by making it a Vanilla Pineapple Margarita.
How to Make a Pineapple Margarita:
Begin by rubbing the rim of a glass with the orange wedge, and then dip the rim into sugar.
Thanks to pineapple juice and a splash of simple syrup, this margarita is a bit sweeter and fruitier than a traditional margarita. Because of this, we are rimming our glass in coarse sugar (instead of salt). I like coarse sugar because it has bigger crystals than granulated sugar, plus it adds a bit of sparkle to the glass.
To make the flavors of this cocktail really come alive, (in addition to the pineapple juice) we’re incorporating the seeds straight from the vanilla bean. The seeds lend a natural and bold vanilla flavor.
To a cocktail shaker filled with ice, add the pineapple juice, tequila, orange liqueur, and orange juice. With a sharp knife, scrape a few of the seeds from the vanilla bean and add them to the shaker. Shake vigorously. Strain into the prepared glass and top with ice.
As these little seeds get shaken up into the cocktail, they also give it a beautiful speckled effect. At a glance you know that this drink is infused with a delicious vanilla flavor.
Garnished with a piece of fresh pineapple and sliver of vanilla bean, this Vanilla Pineapple Margarita will help you kick off our Cinco de Mayo Celebration.
It’s that simple. Naturally, you can double, triple, quadruple, etc. this recipe to serve as many people as you’d like. However, be sure to shake the mixture thoroughly to get those vanilla seeds evenly distributed.

- 1 ounce Sauza® tequila
- ½ ounce orange liqueur
- ½ ounce simple syrup optional
- Splash of freshly squeezed orange juice
- Vanilla bean
