I’m one of the many people who love strawberries! To me, they signal summer. For that reason, I so enjoy delighting my family and friends with strawberry desserts this time of year.
In this post, I’ve gathered recipes for cakes, pies, and other yummy things made with strawberries. I promise you will enjoy making and eating each of these strawberry desserts. (To add to the fun, I threw in a couple of other related posts from IBC!)

Strawberry Ice Cream Cheesecake – Is it ice cream or cheesecake? With such a delicious concoction, I don’t think it matters. This rich and creamy strawberry treat is dreamy to look at and perfect to serve on a warm day.
Strawberry Coconut Cake – Made with a box mix, fresh strawberries, and coconut, this is a cake almost anyone can create and everyone will enjoy. I decorated it with my favorite cream cheese frosting, whole berries, plus strawberry leaves and blossoms. So beautiful!
Strawberry Cheerio Treat Bars – A simple dessert doesn’t have to be ordinary. To make these bright and fruity cereal bars, just combine strawberry-flavored oat cereal, mini marshmallows, and freeze-dried strawberries. Then press the mixture in a pan and drizzle with white chocolate.
Strawberry Rhubarb Pie Bars – These Strawberry Rhubarb Pie Bars are basically Strawberry Rhubarb Pie in handheld form. The combination of flavors, combined with a moist cake may make these your new go-to summer sweet.
Strawberry Shortcake Smoothie – With its cake-like flavor, this smoothie lets you drink your dessert or have a bit of dessert for breakfast. Shortcake dessert shells are blended with strawberries, yogurt, and milk in this smoothie that falls somewhere between healthy and decadent. Top it with a dollop of whipped cream if you like to live on the wild side.
Strawberry Rhubarb Crumble Pie – The sweetness of strawberries and tanginess of rhubarb play off each other wonderfully in this strawberry dessert topped with a crumble made from butter, flour, brown sugar, oats, and cinnamon. You’ll experience summer in every bite. My mouth is watering as I write about it.

Strawberry Rhubarb Cake – This naked Pink Velvet cake is elegant but easy and perfect for warm-weather entertaining. The layers are infused with strawberry rhubarb syrup and sandwiched together with buttercream frosting and sliced berries. The top is adorned with fresh flowers, a few whole strawberries, and more of that delectable frosting.

Strawberry Jell-O Pretzel Salad – This is a classic strawberry recipe that’s great in any season. It’s loaded with contrasts: sweet – salty, creamy – crunchy, healthy – decadent, fresh – prepared. Something for everyone. No wonder it continues to be so popular.
Cheesecake Dip with Strawberries – When you’re pressed for time, try this delightful, “deconstructed” strawberry cheesecake. Just serve fresh whole strawberries with cheesecake dip and graham cracker crumbs. Your guests will enjoy the unique presentation.
