It seems so satisfying to open the refrigerator and pull out a jar of something homemade. Well, this Homemade Giardiniera is exactly that kind of recipe. It’s bright, crunchy, tangy, and packed with bold flavor. The combination of crisp vegetables, briny olives, garlic, and herbs creates a condiment that instantly makes almost anything more interesting.

Per usual, I made this when my mom was visiting so I could photograph it to share with you. She loved it so much that she made up a batch for herself as soon as she got home. It’s that good, my friend! 

One of my favorite things about giardiniera is how many ways you can use it. Spoon it onto Italian sandwiches, pile it onto burgers or hot dogs, or add it to an antipasto platter alongside cheese and cured meats. It’s also great chopped up and stirred into pasta salad or served as a zippy topping for grilled chicken or sausage. Once you have a jar in the refrigerator, you’ll start finding all kinds of ways to use it.

Before I can walk you through the recipe, let’s gather up all the ingredients you’ll need to get started.

  • Cauliflower – The base of this giardiniera, cauliflower florets stay crisp and soak up the tangy marinade beautifully.
  • Celery – Adds a fresh, crunchy bite that balances the richness of the oil and vinegar mixture.
  • Carrot – Brings a subtle sweetness and a pop of color to the mix while adding another layer of crunch.
  • Jalapeño Peppers – Provide a gentle heat that gives the giardiniera its signature kick without overpowering the other flavors.
  • Pimiento-Stuffed Olives – These briny olives add savory depth and a little richness to the vegetable mixture.
  • Salt – Used to draw out excess moisture from the vegetables during the overnight soak; it also seasons them.
  • White Vinegar – The main source of acidity that gives giardiniera its bright, tangy flavor.
  • Garlic – Adds a bold, savory note that complements the vinegar and spices.
  • Dried Oregano – A classic herb in Italian-style pickled vegetables that adds warmth and a slightly earthy flavor.
  • Crushed Red Pepper Flakes – Brings a bit of extra heat and helps give the giardiniera its signature spicy edge.
  • Sugar – Just a small amount balances the acidity of the vinegar and rounds out the overall flavor.
  • Canola Oil – Creates the rich, flavorful marinade that coats the vegetables and gives giardiniera its signature texture.

How To Make

And with all of our ingredients assembled, I think we’re ready to make this Homemade Giardiniera. I’ll walk you through the steps below. I’ve also provided a full ingredient list and instructions in the printable recipe card below.

  1. Place the cauliflower florets, chopped celery, carrot, and sliced jalapeños in a large bowl. Sprinkle with the salt and pour in enough cold water to fully cover the vegetables. Cover the bowl and refrigerate overnight.

  1. The next day, drain the vegetables and rinse them well with cold water to remove the excess salt. Drain again thoroughly, then stir in the drained olives.
  2. Divide the vegetable mixture between two clean quart jars. (Apparently, my brain wasn’t working when I was making this, and I forgot to mix the olives into the vegetables. So, do as I say, not as I do.)
  3. In a separate bowl, whisk together the vinegar, minced garlic, oregano, red pepper flakes, and sugar. Slowly whisk in the canola oil until the mixture is well combined.

  1. Pour the dressing evenly over the vegetables in the jars, making sure everything is well coated.
  2. Seal the jars with lids and store them in the refrigerator. Allow the giardiniera to marinate for at least a day before serving. It will keep in the refrigerator for up to three weeks.

Recipe Variations

  • Make it milder – If you prefer less heat, reduce the jalapeños or swap them for milder peppers like banana peppers or sweet bell peppers. You can also decrease the crushed red pepper flakes for a gentler flavor.
  • Turn up the heat – For a spicier version, add extra jalapeños or include a few serrano peppers. Increasing the crushed red pepper flakes will also give the giardiniera a stronger kick. 
  • Add more vegetables – Giardiniera is very flexible, so feel free to mix in other crisp vegetables. Chopped bell peppers, radishes, green beans, and broccoli are all great additions that add color and texture.
  • Make a Chicago-style version – Chicago-style giardiniera typically includes more oil and additional vegetables like chopped bell peppers. Increasing the oil slightly will give it a richer texture that works well on sandwiches.
  • Experiment with herbs and spices – While oregano and red pepper flakes are classic, you can easily add other flavors. A pinch of dried basil, thyme, fennel seed, or a few whole peppercorns can give the giardiniera a slightly different character.
