We made some and had some leftover. We refrigerated in a glass container with a lid. It was fine the next day. Some even preferred it chilled! I reheated mine in the microwave and it was still tasty.

does the alcohol from the wine cook off? It sounds delicious but this is my only concern
No. You shouldn’t be boiling it. Keep it at a nice drinking temperature and you should be fine. (Obviously you can’t keep it heated for days and days.)
