Strawberry Hand Pies:

Today are making some adorable and delicious strawberry hand pies. Yum!

For those of you who are new to IBC, I’m using this year to perfect my pie making skills with my series “A Year of Pie.

After trying a few more traditional pies, I’m now having fun mixing things up with unique takes on classic recipes.

My latest creations are these delicious Strawberry Hand Pies.

Since spring and summer are refusing to show their faces around PA (and I say spring and summer because usually winter is so long that spring lasts about a week and then summer is here.), I decided to take matters into my own hands and bring summer to my house.

For me, when it comes to fruit, there is nothing more summery than strawberries. And seriously, who doesn’t want a pie that you can hold in your hands.

How To Make Strawberry Hand Pies:

Begin by preheating your oven to 400 degrees F. Line a baking sheet with a silicone mat or parchment paper and set aside.

Next, in a medium bowl, combine strawberries, sugar, cornstarch, and vanilla and set aside.

Working with half of your prepared pie dough at a time, on a lightly floured surface, roll out the dough until it is about 1/8 inch thick. Using a 6-inch cookie cutter (or round bowl or plate with a 6-inch diameter), begin cutting out your rounds. Repeat with the remaining half of the dough.

Form any excess dough back into a ball, roll out and cut again. Repeat this until you’ve used as much dough as possible.

With all of the rounds cut, in a small bowl, whisk together the egg and water. Lightly brush this around the edges of each pie dough round. Then, place about 2 – 3 tablespoons of the strawberry filling onto one-half of each round. Fold the opposite side of the dough round over to enclose forming a half circle.

Using a fork, gently press the edges together to seal; then pierce the top of each pie to allow any steam to escape. Brush the tops of each hand pie with the egg wash and then generously sprinkle each with sanding sugar.

Bake for about 20 to 25 minutes until the pies are golden brown. Transfer the pies to a wire rack to cool slightly before serving.

And that’s it! Adorable and delicious little hand pies!

While these are delicious on their own, if you like a little more sweetness, serve them with a scoop of ice cream. You could also drizzle them with a sugar glaze. Yum! However, for this recipe, I just opted with a little sanding sugar on top.

I really like to serve these Strawberry Hand Pies at an informal brunch. They are also great for a picnic or even a delicious homemade snack on the road. While I love the strawberry filling, you can easily substitute whatever fruit you’d like.

Ingredients

  • 1 Homemade Pie Crust My favorite recipe is linked in the NOTES below.
  • 3 cups strawberries cut into 1/2-inch pieces
  • 4 tablespoons granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla
  • 1 egg
  • 1 tablespoon water
  • 1/4 cup sanding sugar for garnish

    1. I’ll answer my own question, since I made these yesterday. The recipe makes about 12. I made it twice and did not roll out one section of dough enough to get the 6 that the other 3 sections produced. Great recipe, though!

  4. These look so cute, and I’m sure they taste delicious! I love anything strawberry and usually just polish ’em off plain right from the package, so I can only imagine how much I’d love them baked into a hand pie. Also, the name “hand pie” is adorable.

  5. They’re so sweet- perfect for a picnic or a summer party. I feel ya on the winter thing. I live in northern VA but work in Philly and its been miserable in both places. Longest winter. ever. This week is supposed to be gorgeous though. Hope you got your summer fix in CA!

  6. I rarely make pies because my husband doesn’t like them. I love them but if I make one, I know I will eat the whole thing by myself. This is a great way to make my own personal pies. I love the idea of making these for a brunch as well.
