I like to make a tortilla chip dip and it’s so easy to make. In a pyrex pie dish, I layer first 8 oz of cream cheese, spread on bottom of dish. I then follow with refried beans (from a can), then layer ontop mild salsa and top with shredded cheddar cheese to cover top fully. Right before serving, I microwave for appox. 5 minutes, until the cheddar cheese is fully melted. It’s easy, quick and always a hit.
Small rounds of french bread topped with pesto, brie and sun dried tomato – stick ’em in the oven for a few minutes – yummy!

My favorite pot luck type party food is something I recently came up with while trying to eat healthier. I mix the leanest ground turkey or chicken (seasoned to my liking) with brown rice, cooked spinach, canned mushrooms and Classico brand 4 cheese alfrado sauce. It’s tastes so good and is filling too. I’m thinking next time I prepare this I’ll add chopped onion too.
The recipe you’ve shared here is perfect for movie night with my gal pals. We meet again a week from tonight and I’m going to try this cheese ball. I’m sure it will be a hit and looks fun to make!

I love a spinach artichoke dip with cream cheese.
Since most folks usually cover things in the savory department, my party go-to tends to be something sweet! I like to whip and bring Tembleque – a Puerto Rican dessert typically made around the holidays but wonderfully adaptable for any time of year 🙂
What is it? It’s – at its most basic – a coconut pudding. It can be a really fun summertime dessert (it’s served chilled and requires no baking time – hello!) but the flavours have a really lovely warmth that makes it equally delightful in the fall and winter. It also lends itself to some creative license. Don’t like cinnamon? Okay, well switch it out for nutmeg perhaps. Want a bit of texture? Add toasted coconut flakes on top – which also gives it a bit of festive colour. Need something to both cut through and enhance the coconut flavour? Try adding a smidge of vanilla or almond extract. Or maybe some orange blossom water (which lends the pudding to a pleasant finishing-sprinkle of pistachios atop). Looking to make enough for 40 people? The recipe generously lends itself to doubling (and tripling). Looking for personalized desserts? This can easily be poured/ladled and chilled in individual molds (even plastic cups).
Served alongside a pineapple smoothie (rum optional) or cup of eggnog/cocoa and you have yourself a fun summertime/wintertime/anytime treat!
P.S.
It can be served warm, too (though it isn’t traditionally) – just don’t let it hit room temperature. It can be sort of funky then. Chilled or warm is the way to go 🙂
