I don’t know about you, but this summer has been a busy one for me. I am thankful, though, because it has meant lots of fun times with my family and friends.

Whenever I head to someone’s house, I always like to bring something with me. Whether it is a big pitcher of sangria, a tray of cupcakes, or another yummy treat, I try not to show up empty-handed.

Although I tend to rely on a few standard recipes, I always keep an eye out for something new. Any recipe that is delicious, easy, and affordable is a winner in my book! If it involves cheese, so much the better!

I’ve found that cheese balls are always popular at parties. They are a tasty snack, and you can get really creative with the ingredients. Since I’m also a big fan of buffalo chicken, I knew that combining the two would be a match made in heaven.

  • In a large bowl, mix blue cheese, onion powder, garlic powder, buffalo sauce, cream cheese, and cheddar cheese. Then, form the mixture into a ball.
  • Spread out the chopped walnuts on a sheet of plastic wrap and roll the cheese ball in the walnuts. Wrap the plastic wrap around the ball and refrigerate it for at least thirty minutes. Serve with celery and crackers.

  1. My favorite party food to take are mini pesto pizzas. Slice pizza dough into 15 rounds, then cut in half. (I use the pre-made dough in cans). Roll dough into a ball, then flatten. Spread pesto on each, then top with a slice of Roma tomato, optional pepperoni, shredded cheese and bake. This was adopted from a Pampered Chef recipe.

  2. I love making smoked salmon bites. Using a pastry crust or some flaky shell, you combine smoked salmon, cream cheese, sharp cheddar cheese and chives – mix well. Put it into your bread/shell in a mini muffin tin and bake until bubbly. Serve warm – ALWAYS a hit!

  3. Our current obsession is Jalapeno Popper dip! So creamy and delicious, we just made it yesterday, all for ourselves. Is that bad? 😉 Wherever I take it I’m asked for the recipe and the dish is pretty much licked clean!

  4. I love a platter of roasted red peppers, mozzarella balls, pickled mushrooms and olives. I’m Italian so I love the feeling of eating a light appetizer.

  5. I make Italian Shrimp dip, because it goes with veggies, crackers, or chips – my dad even made an open face sandwich with it once (broiled it!)

    Take a small can of deveined shrimp, rinse and drain it really well, and mash it up with a fork in a bowl that will hold 3 cups at least. Then sprinkle the shrimp with a packet of Good Seasons Spicy Italian dressing mix, then fold in 1 cup Best Foods or Hellmann’s mayo and 1 cup sour cream. Mix well, and refrigerate for a few hours for the seasonings to blend. It’s hard to wait, I know. It’s easy to double, and if you like a little less seasoning, you can fold in just a bit more of the mayo and sour cream 1:1.

    We really love it with cauliflower!
