It’s Fall Cookie Week! Let’s talk about today’s cookie (All the FCW recipes can be found here in case you missed any). Today I’m so excited to share my recipe for Waffle Cookies with Maple Glaze!

That’s right, we are trying something totally different. We’re baking cookies in a waffle iron: Cinnamon Waffle Cookies with Maple Glaze.

I know. I know. My inner Leslie Knope just exploded.

People love waffles and people love breakfast for dinner, so why not bite-sized waffles coated in a maple glaze? You can eat them any time of the day. It’s genius.

How do you Make Waffle Cookies?

These cookies are a bit time consuming because you can only “bake” four at once (depending on the size of your waffle iron.), but they bake quickly, and I think the results make the time totally worth it.

You wouldn’t think this technique would work, but it does. The cookies come out of the waffle iron feeling a bit soft and waffle-like. Once they start to cool, they get a semi-firm, almost-crusty exterior which makes them much more cookie-like.

And since waffles aren’t complete without maple syrup, these cookies get dipped into a maple syrup glaze. – Be sure to use pure maple syrup. It makes a big difference.

So unique and simple, right? These Waffle Cookies will definitely add some interest and delight to any cookie tray. They are ideal for the holiday gifts, too.

Waffle Cookie Recipe:


Cinnamon Waffle Cookies with Maple Glaze

Makes about 3 dozen cookies

Here's what you will need:
2 sticks butter, unsalted
1 cup sugar
1/4 teaspoon salt
2 teaspoons cinnamon
3 eggs
2 cups all-purpose flour

Maple Glaze
1 cup powdered sugar
1/3 cup pure maple syrup
1/4 teaspoon salt

In the bowl of a stand mixer, cream together the butter and sugar until smooth (about 4-5 minutes). Add the salt and cinnamon. Mix to combine.

Turn the mixer to medium and add the eggs one at a time until incorporated.

Set the mixer to low and slowly add the flour. The batter will be sticky.

Next, turn on your waffle iron and set the temperature to medium-high (400 degrees F). Add about a tablespoon of dough to each section of the waffle iron. "Bake" for 2-4 minutes or until the cookies golden brown. Let the cookies cool and crisp up on a wire rack.

For the glaze, whisk together the powdered sugar, maple syrup, and salt until smooth. (If the mixture seems too thick, you can thin it with a little milk.) Dip the tops of each cookie into the glaze and return them to the cooling rack to set. Pack and store your waffle cookies in an air-tight container.
