It’s currently summer, which means I’m always on the hunt for easy recipes that feel fresh, cool, and satisfying. Salads are an obvious choice, but even I have to admit they can start to feel a little boring after a while. That’s where these Cobb Salad Wraps come in.

I love a good Cobb salad. Whenever I spot one on a menu, I’m almost immediately drawn to it.   1. Add the chicken, green onions, tomato, avocado, and hard-boiled eggs to a large bowl. Gently toss the ingredients together, taking care not to mash the avocado.

  1. In a separate small bowl, whisk together the red wine vinegar, olive oil, Dijon mustard, sugar, salt, and pepper until combined.
