I’m always happy to have another easy drink recipe in my back pocket. I’m even happier when I get to share one with you. And this one feels a little more special than simply pouring something over ice. This Cherry Pineapple Cooler is colorful, refreshing, full of fresh fruit flavor, and takes hardly any effort to pull together. Love that!

The combination surprised me in the best way. The cherries bring sweetness and that gorgeous color; pineapple gives it a tropical twist, and fresh lime keeps everything bright. Top it all off with bubbly cherry ginger ale, and you have a really fun mocktail. Or, if you’re in the mood for a cocktail, add a little coconut rum. That might be my favorite way to enjoy it.

You might remember the Cherry Lime Splash I shared a few weeks ago. This drink is similar, but the pineapple and coconut rum give it a tropical twist that I really love. I think you’re going to enjoy this one, too. Let’s get into the details.

Why You’ll Love This Recipe

  • Fresh, fruity flavor. Fresh cherries, pineapple juice, and lime come together in a way that’s sweet, bright, and refreshing. You get plenty of fruit flavor without the drink feeling overly sweet or heavy.
  • It’s incredibly easy to make. There’s no complicated prep or special technique here. Just muddle the cherries, add the remaining ingredients, pour over ice, and top with fizzy cherry ginger ale.
  • It’s perfect for warm-weather sipping. This is especially refreshing on a hot day. It’s an easy drink to make for afternoons on the patio, casual get-togethers, or whenever you’re craving something fun and fruity.

Ingredients

It’s time to gather up all the ingredients you’ll need to make this refreshing drink recipe.

  • Fresh Cherries â€“ Fresh cherries add natural sweetness, juicy flavor, and that beautiful rosy-red color once muddled.
  • Pineapple Juice â€“ Pineapple juice brings a sweet, tropical flavor that pairs especially well with the cherries and lime.
  • Fresh Lime Juice â€“ Fresh lime juice adds brightness and a little tartness to balance the sweeter fruit flavors.
  • Simple Syrup â€“ Simple syrup is optional, but it’s an easy way to add a touch more sweetness if your cherries or pineapple juice are on the tart side.
  • Canada Dry Fruit Splash Cherry Ginger Ale Zero Sugar â€“ This adds plenty of fizz along with an extra layer of cherry flavor and a light ginger note.
  • Rum or Vodka – Either works well if you’d like to turn this into a cocktail. I especially love coconut rum because it plays so nicely with the pineapple.
  • Fresh Cherry and Lime Slice â€“ A fresh cherry and lime slice make an easy garnish and hint at the flavors in the drink.

Frequently Asked Questions

Can I make this ahead of time?

You can prepare the cherry, lime, pineapple, and simple syrup mixture a few hours ahead and keep it covered in the refrigerator. Wait to add the ginger ale until just before serving so you don’t lose all of that carbonation.

How do I know if I need the simple syrup?

Taste the mixture before adding it. The sweetness of fresh cherries and pineapple juice can vary quite a bit, so you may find you don’t need any additional sweetener at all. If it tastes a little too tart, stir in a small amount of simple syrup and adjust from there.

What can I use if I can’t find cherry ginger ale?

Regular ginger ale works beautifully, although the cherry flavor will be a little more subtle. You could also use a cherry-flavored sparkling water for a less sweet option, or combine regular ginger ale with a small splash of cherry juice for a similar effect.
