Of all the herbs, mint may be my favorite and I’m honestly not sure why. While I like the taste, I’m certainly not obsessed with it. However, give me mint chocolate chip ice cream or some other sort of mint and chocolate combination and I’m all over it. I think what I like most about mint is the way it looks. When it comes to garnishing a cocktail, a bowl of fruit, or some other scrumptious concoction, mint always delivers.

With temperatures on the rise and lots of mint planted, today I thought I’d explore this wonderful herb and create a fun little float for summertime porch sipping!

For this particular recipe, I’ll be using pineapple mint, which tops my list not only for its flavor, but its gorgeous variegated leaves as well. You seriously need this in your garden ASAP.

This fun little float combines so many refreshing flavors. In addition to the mint, the lime and soda make this drink so refreshing while the ginger simple syrup adds a bright little bite.

Even though this recipe is alcohol-free, you could easily turn it into a cocktail with the addition of a little citrus vodka. I think it also could work as a delicious punch. Gotta love that!

Ginger & Mint Lime Float

Lime sorbet, fresh mint, and ginger come together to create a bright and refreshing drink in this Ginger & Mint Lime Float.

Ingredients

  • 1 cup water
  • 1 piece 2 1/2 inch fresh ginger peeled and sliced
  • 3/4 cup sugar
  • 1 lime cut into 8 wedges
  • 4 sprigs mint
  • 1 cup lime sherbert
  • 2 cup club soda chilled

Instructions

  • Begin by making the ginger syrup. In a blender, combine the water and ginger; then blend until pureed. Transfer this mixture to a small saucepan. Stir in the sugar. Bring the mixture to a boil then reduce the heat to a simmer. Heat for about 10 minutes or until the mixture starts to thicken slightly. Cool completely
  • For each float, pour about 1/4 cup of the ginger syrup into a glass. Squeeze in two lime wedges and then put the wedges in the glass. Add a pinch of the julienned mint. Then muddle. Fill the glass about 3/4 full with club soda. Add one or two scoops (about 1/4 cup) of lime sherbet. Garnish with a sprig of mint.

  4. I also LOVE fresh mint, especially in the summer. I add it to my sweet tea, I’m from the south, and lemonade, and sparkling water! Mojitos anyone? Ur recipe sounds perfect and kid friendly, although I may add a little something for the grown folk:) lol
