Fall Cookie Week 2017 | Inspired by Charm

Fall needs caramel, right? Whether molded around an apple, drizzled on cream cheese, or sandwiched inside two spicy chocolate cookies, it’s an essential flavor this time of the year.

Today, however, I’m passing on the caramel and opting for its decadent cousin, dulce de leche. As I explained in my Salted Caramel Cheesecake Dip post, dulce de leche is similar to caramel sauce but thicker and richer. It’s made with sweetened condensed milk or a combination of milk and sugar. Typically, in recipes, one cannot be substituted for the other.  (Speaking of fall flavor, be sure to check out cookie recipe Julie Blanner made for FCW at the end of this post.)

The idea for these cookies was to combine crispy, deep chocolate with smooth, rich caramel. As Ina Garten would say, “How bad can that be?”

The cookies are a typical icebox slice-and-bake style, which makes them super easy to make. Everything gets mixed together, formed into a roll, and then chilled until firm.

To give the dough a more seasonal flair, I added cinnamon and cayenne. The pepper doesn’t make these cookies spicy hot. Rather, it adds depth of flavor and makes them warm and comforting.

Once the cookies are baked, they get sandwiched together with creamy dulce de leche to create one glorious union.

I’ve become a firm believer that all cookies should be sandwiched together with some sort of frosting, icing, or sauce. Who wouldn’t want two cookies that count as one, right?

Dulce de Leche Chocolate Sandwich Cookies

Makes 2 dozen cookies

Here's what you will need:
3/4 cup unsalted butter, softened
1 cup sugar
3/4 cup unsweetened cocoa powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon cayenne pepper
1 eggs
2 teaspoons vanilla
1 1/4 cups all-purpose flour
1 jar (about 13 ounces) dulce de leche

In a large bowl with a mixer, beat the butter on high for about a minute. Then add the sugar, cocoa powder, cinnamon, salt, and cayenne pepper. Next, beat in the egg and vanilla. Then, beat in the flour.

Divide the dough in half, cover and chill for about an hour or until the dough has stiffened some and is easy to handle. Then, shape each portion of dough into a 6-inch roll. Use a little flour to help in forming the roll, if needed. Wrap each roll in plastic wrap and chill until firm enough to slice. About 4 hours.

Once the dough is firm, preheat your oven to 325 degrees F. Line a cookie sheet with parchment paper. Cut the rolls into 1/4-inch slices and place the slices about an inch apart on the prepared cookie sheet.

Bake 14-15 minutes or until the edges are firm. Cool on the cookie sheet for about 2 minutes; then remove and finish cooling on a wire rack.

Spread dulce de leche on the bottom of half the cookies. Then top each with one of the remaining cookies. Store refrigerated in an airtight container.

Even though these sandwich cookies aren't over-the-top fall, they would make a great addition to any cookie spread at a seasonal get-together.

If you’re new to Fall Cookie Week (FCW), this is an annual series I started in 2012 to celebrate fall baking and my favorite flavors of the season. Last year, my pal Julie Blanner joined in on the fun, and we doubled the number of FCW cookie recipes. I am so excited that this tasty week is back and even more thrilled to be teaming up with Julie again. I’m kicking things off with these Pumpkin Cinnamon Roll Cookies!

I thought I’d start off this 2017 series with something unique but quintessentially fall: Pumpkin Cinnamon Roll Cookies.

I’ve been wanting to make a cinnamon roll cookie for quite some time, and today felt like the perfect opportunity. And though cinnamon roll cookies are fabulous on their own, I decided to fall-ify mine. Inspiration came from my recipe for Pumpkin Cinnamon Rolls (which are amazing).

How to Make Pumpkin Cinnamon Roll Cookies:

These cookies are made in a similar way to cinnamon rolls. The dough gets rolled up after being sprinkled with cinnamon and sugar to create that classic cinnamon roll spiral.

Then, after some time in the refrigerator, the dough is sliced and baked.

Once cooled, the cookies are dunked in a sweet glaze.

As you can see, this is an easy cookie to make, and because of the pumpkin addition, it’s ideal for fall. The resulting cookie is dense but still soft and rich.

How to Make Pumpkin Cinnamon Roll Cookies:

These Pumpkin Cinnamon Roll Cookies will add seasonal flavor and fun to your fall baking.

Pumpkin Cinnamon Roll Cookies

Makes about 6 dozen

Here's what you will need:

1/2 cup packed brown sugar
2 teaspoons ground cinnamon
2 teaspoons pumpkin pie spice
1 1/4 cup unsalted butter, softened
4 ounces cream cheese, softened
1 1/2 cups sugar
2 eggs
2/3 cup pumpkin puree
2 teaspoons vanilla extract
4 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon active dry yeast
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/2 teaspoon salt

Glaze:
1 1/2 cups confectioners' sugar
1/2 teaspoon pumpkin pie spice
1 teaspoon vanilla extract
3 tablespoons milk

In a small bowl, mix together the brown sugar, 2 teaspoons cinnamon, and 2 teaspoons pumpkin pie spice. Set aside.

With a mixer, cream together the butter, cream cheese, and sugar until light and fluffy. Beat in the eggs, pumpkin puree, and vanilla extract. In another bowl, whisk together the flour, baking powder, dry yeast, cinnamon, nutmeg, cloves, and salt. Gradually add the dry mixture to the wet until just combined.

Divide the dough into four equal parts. On a lightly floured surface, roll each into an 8x6-inch rectangle. Sprinkle each with about 3 tablespoons of the brown sugar mixture. Roll up tight starting with a long side. Wrap in plastic and refrigerate for 1 hour or until firm.

Preheat your oven to 350 degrees F. Cut the dough into 3/8-inch slices. Place 1 inch apart on a greased (or parchment-lined) baking sheet. Bake 10-12 minutes or until the bottoms of the cookies are light brown. Remove from the sheet pan and allow to completely cool on a wire rack.

In a small bowl, whisk together the glaze ingredients. (Add more milk if needed, one teaspoon at a time, to create a thin glaze.) Dip the tops of the cookies into the glaze. Let stand until set. Store in an airtight container.

Ingredients

  • 24 large fresh mushrooms - I used mini portobellos.
  • 1/2 cup seasoned breadcrumbs
  • 1/3 cup parmesan cheese
  • 1/3 cup sour cream
  • 2 tablespoons chopped fresh flat leaf parsley
  • 2 cloves garlic - minced
  • 1/4 teaspoon black pepper
  • 1/3 cup crumbled blue cheese
  • 1/4 cup chopped toasted walnuts
  • 1-2 tablespoons olive oil

Instructions

  • Begin by preheating your oven to 425 degrees F. Clean the mushrooms and remove and discard the stems. Place the mushrooms stem side up on a baking sheet.
  • In a small bowl, combine the breadcrumbs, parmesan cheese, sour cream, parsley, garlic, black pepper, blue cheese, and walnuts. Spoon this mixture into the mushroom caps. Lightly brush with olive oil.
  • Bake for 17 to 20 minutes or until lightly brown on top and heated through. Garnish with a sprinkle of parsley if desired.

At this point, I think you’ve seen most of my Pittsburgh apartment. One space I haven’t shown you yet is my apartment balcony. Although it’s not large, I love having this outdoor area, and I’m excited to share it with you today.

In all honesty, this space came together rather serendipitously.

I stumbled upon these two chairs at HomeGoods just before I moved to Pittsburgh. I actually purchased them for a project at my St. Marys’ house, but they ended up making the move with me and work well out here.

As someone who loves to get my hands in the soil, I knew I’d need a couple planters. Last year I picked up these big containers at West Elm. Since I wouldn’t be using them in St. Marys, I brought them here, and they are now at home on my balcony.

I love that the taller one gives some height, while the shorter one is large enough for an evergreen. I snapped up this unique guy on clearance at Lowes. It’s been doing well and even sprouted a few new branches. I’m not sure it will survive the winter, but it’s worth a shot.

I also tucked in a couple other planters and filled them with herbs. I used the herbs, especially the basil, quite a bit this summer. Remember my trio of crostini recipes? A lot of the herbs in those were from this little garden.

This unique cement cactus is another HomeGoods find. (I think I got it when I picked up the chairs.) It’s just a fun, odd accessory. The pillows were from Target’s summer collection.

When I was growing up, my Mom would always order butter pecan ice cream whenever we’d go out for ice cream. I remember giving her the stink eye because I thought, “Why in the world would anyone want that flavor?” However, sometime in my 20s, I tasted butter pecan Ice cream and totally fell in love with the flavor. It all made sense. My mom really did (and does) have great taste.

They say as you mature, so does your palette. Years ago, I shied away from any cake, cookie, muffin, or dessert that had nuts in it. Now I so appreciate the flavor and crunch that nuts give to some of my favorite recipes.

Move over pumpkin spice, you have some competition. These Butter Pecan Cupcakes are a delicious and easy dessert to celebrate the flavors of fall.

Butter Pecan Frosting:

Instructions

  • Begin by preheating your oven to 350 degrees F. Line two muffin pans with paper liners; set aside. In a skillet, heat 3 tablespoons of butter over medium heat. Add the chopped pecans and cook 5-6 minutes until toasted. Allow the pecans to cool.
  • In the meantime, in a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  • Then, with a mixer, cream together 1 cup butter with the sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Scrape the bowl down when needed. Beat in the vanilla. Mix in the dry ingredients, alternating with the milk. Beat until just combined. Fold in 2 cups of the pecans and save the remainder for the frosting.
  • Scoop the batter evenly into the prepared muffin tins. Bake for 18-20 minutes or until a toothpick inserted near the center of a cupcake comes out clean. Remove the cupcakes from the pan and allow to cool on a wire rack.
  • Meanwhile, prepare the Butter Pecan Frosting. With a mixer, beat the cream cheese and butter together 5-6 minutes until light and fluffy. Slowly add the confectioners' sugar, 1 cup at a time, mixing in between. Beat in the vanilla and salt. Add enough milk to achieve a smooth consistency. Fold in the remaining 3/4 cup pecans. Spread the frosting on the cupcakes with a spatula and top with a pecan half.

As you may know, modern folk music is among my favorite genres. That’s thanks in part to The Lumineers, Brandy Carlisle, Mumford & Sons, and so many other artists you probably have never heard of. There’s something about folk and Americana that lends itself to this time of the year. For me, fall is like a big ol’ hug that makes me feel warm and happy. Folk or folkish music does the same. Do you know what I mean?

I’m calling this new Tuesday Tunes playlist Falling For Folk. (I made another folk music playlist last fall. You can listen to that here.) This latest collection is mostly new-to-me songs with a few old favorites sprinkled in. I think it’s perfect to play at a fall gathering, on your way to the pumpkin patch, or while you’re whipping up something warm and tasty in the kitchen. Per usual, I’ve been listening to this playlist non-stop for the past couple weeks. I love it and hope you do, too.

How to Make Pumpkin Slab Pie:

A Pumpkin Slab Pie (also known as a pan pie) isn’t new or revolutionary. However, one of my favorite things about recipe creation is putting my personal spin on things. Making it Inspired-by-Charmesque, so to speak.

Of course, I started things off with my go-to pie crust. I rolled out about 3/4 of the recipe, which gave me enough to cover the bottom and sides of a half sheet pan (lined with parchment).

The crust is then pre-baked a bit to keep it from getting soggy once that glorious pumpkin filling is added.

I rolled out the remaining pie dough and cut out circles in various sizes. (As you can see, I didn’t have circle cookie cutters so I just used lids from things in my kitchen. It worked great.) I thought this would be a fun way to decorate the top of the pie and give it a modern twist. I also pre-baked these so that they would sit nicely on top of the pie. (Since they wouldn’t be baked with the pie the entire time it was in the oven so I also wanted to ensure the dough would be baked thoroughly.)

Once the crust was ready, I mixed my pumpkin filling, spread it out over the crust, and placed the pie back in the oven. The pie takes about 30 minutes in total to bake. About 20-25 minutes into the baking, I added the pie crust circles in a random pattern to the top of the pie filling. This was a good time because the filling had started to set, allowing the circles to sit on the top rather than sinking into the filling.

And that’s it. After the pie cools, you can slice it any way you like. I went with triangles for a more modern vibe. Plus it looks pretty.

Ingredients

Instructions

  • Begin by preheating your oven to 400 degrees F. Then line a 15x10-inch baking pan with parchment paper. Reserve about 1/4 of the pie dough. Roll out the rest in a16 x 11-inch rectangle. Place the dough in the prepared baking pan, cutting off any excess dough. Cover with foil and bake for 10 minutes. Remove foil.
  • In the meantime, roll out the remaining dough to about a 1/8-inch thickness and cut out circles in various sizes. Place the cut circles on a parchment-lined baking sheet and bake for about 5 minutes. Remove from oven before any browning appears.
  • In a large bowl, combine the pumpkin, brown sugar, spices, salt, eggs, and half-and-half. Stir until just combined.
  • Pour the pumpkin filling into the partially baked pie crust and bake for about 30 minutes. (A knife inserted near the center should come out clean when fully baked.) About 20-25 minutes into baking, randomly place the pre-baked pie crust circles on the top of the pumpkin filling.
  • Allow the pie to cool completely on a wire rack. To serve, slice, plate, and top with homemade whipped cream and sprinkle of cinnamon.

It’s been a fun, festive, and fall-inspired week here on IBC. I gave you a tour of my kitchen and dining space, shared two cheeseball recipes with you and even threw in dessert: Salted Caramel Cheesecake dip. After all that, it’s time for a cocktail.

Have you ever had a Moscow mule? It’s made from vodka, lime juice, and ginger beer. Simple but bright and refreshing. Plus, it’s served up in a frosty copper mug, which helps it feel extra special.

You might remember that last fall, I created an Apple Pie Sangria. What really brought the sangria to life was the apple pie spice simple syrup I made to go in it. That got me thinking, “I should add a pear simple syrup to a Moscow mule.” Done.

To make the simple syrup (recipe below), just boil together pear juice, sugar, spices, and diced pear. Once the sugar dissolves and the liquid starts to thicken, it’s ready.

A splash of this syrup in your Moscow mule will make it autumn ready. Feel free to adjust the amount, depending on how sweet you like your cocktail.

Spiced Pear Moscow Mule

Makes 1 cocktail

Here's what you will need:
2 ounces vodka
1.5 ounces spiced pear simple syrup*
1 ounce freshly squeeze lime juice
About 4 ounces ginger beer
Pear slice and cinnamon stick to garnish

Begin by filling your mug with ice. Add the vodka, spiced pear simple syrup, and lime juice. Top with ginger beer. Stir to combine. Garnish with a pear slice and cinnamon stick.

*Spiced Pear Simple Syrup
1 cup pear juice
1 cup sugar
1 cinnamon stick
1/4 teaspoon nutmeg
1/4 teaspoon allspice
1 pear, diced

In a small pan, add the pear juice, sugar, cinnamon stick, nutmeg, allspice, and diced pear. Bring to a boil and cook for 5 to 8 minutes. The liquid should be slightly thickened. Strain through a fine mesh sieve and allow to cool.

I recently took to my dining room to add some fall style by creating a seasonal tablescape and embellishing my bar cabinet. Let me show you what I did.

I think I should have called this “fall entertaining week” on Inspired by Charm. Yesterday, I gave you another tour of my kitchen and shared seasonal cheeseballs with you. Today, I’m back to give you a look around my dining space with its nod to fall.

It was just last week that I revealed my new dining table and chairs. The timing of their arrival was great since my brain was swirling with ideas for fall and Halloween decorating.

This tablescape ended up being something quick and fun that I thought you might want to see. To start, I used round rattan placemats. I chose circular placemats because rectangular ones or even a runner can be problematic on a round table. And while rattan works any time of the year, I especially like the texture and warmth it offers in the fall.

Next, I added white plates topped with colorful plaid napkins I found at HomeGoods. On top of them, I went a bit nontraditional and used blush pink plates. It may be hard to tell in the photos, but it’s the perfect hit of unexpected color.

Some brass and black pumpkins (from West Elm last year)  finished off the place settings, and vintage polka dot glassware adds a fun and whimsical flair.

I’m part of a flower CSA from a local garden, so I put those blooms in a mason jar to dress up the table. The colors of the flowers and the napkins were a serendipitous combination.

Remember that vintage wood tray I hung on the wall in my kitchen? Well, I used another one here to corral a vase of Amaranthus, a basket of plums, and another brass pumpkin. I love using trays when decorating. Without the tray, this set-up might look a bit cluttered or random. Grouped together in this manner, it all looks organized and purposeful.

I get that a cheeseball is kind of basic. However, when done in the right way, I think it can be a fun appetizer. (Remember my “apple” cheeseballs from a few years ago? They are still one of my favorites.) Plus, who doesn’t like a big ball of cheese?

For this presentation. I made two: an Everything Bagel Cheeseball and a Sun-Dried Tomato Cheeseball. (You can grab the recipes and HERE and HERE.)

To make them a bit more seasonal. I broke off two stems from pie pumpkins and popped the stems on the cheeseballs. I also used a little trick to create some grooves in them. It’s little details like this that create the illusion of pumpkins.

And because two cheese balls weren’t enough to make a grand display, I doubled one of the recipes and split it into three parts to make three additional balls.

While the base of the cheeseball was the same, I wanted to get a bright orange looking pumpkin so I crushed up a secret ingredient, and rolled them in that. I’d say the color was perfect. Wouldn’t you?

With the cheeseballs made, I assembled the display, starting with a cutting board and cake stand I picked up at HomeGoods. I used colorful ceramic berry baskets I had along with jars to hold crackers and breadsticks for dipping. Then I filled in the display with goodies from the farmers market: mini pumpkins, gourds, grapes, and these adorable baby eggplants.

Voila! Boring cheeseballs? I think not.

And with that, fall entertaining in the kitchen can commence.

Truth be told, I love a tasty cheeseball. (Well, to be completely honest, I love cheese in any form.) Unfortunately, it seems that the humble cheeseball has gotten a bad rap. It’s been around forever and is viewed as boring by some. That’s why I decided it was time for a little makeover.

How to Make an Everything Bagel Cheese Ball:

First, I started with the flavor.

The concept for this cheeseball was inspired by the super trendy everything bagel. Obsessed with the “Everything But the Bagel” seasoning blend from Trader Joe’s, I assumed a cheeseball covered in the spices would be incredible. Boy, was I right!

It’s that classic flavor we’ve all come to love.

While this cheeseball is outstanding on its own, I decided to take it one step further and shape it into a pumpkin. To do that, I removed a stem from a small pumpkin and inserted it into the top of the cheeseball.

To remove a stem from a pumpkin, I recommend cutting off the very top of the pumpkin like I did here and then peeling away the pumpkin flesh. This will lessen the risk of breaking the stem.

While the stem clearly made this look like a pumpkin, I also used a chopstick to create grooves from the base of the pumpkin to the stem. This extra step makes this illusion more realistic, don’t you think?

Not severing this recipe in the fall? No worries. Skip the pumpkin shape and just roll it into a ball to suit any season or holiday.

Serve the cheeseball with bagel chips (which I couldn’t seem to find) for the ultimate flavor combo. Pretzels, crackers, breadsticks or even crostinii make a delicious pairing too.

And because all of that wasn’t enough, I decided to make three smaller pumpkin cheeseballs. I simply doubled the base recipe for the sun-dried tomato ball and divided it into three parts.

I wanted an intense orange color for these three cheeseballs, so I busted out my secret ingredient: Nacho Cheese Doritos. I put them in a large plastic baggie and smashed them with a rolling pin. Pulverized, they were the perfect shade of orange, and they added a delightful flavor to my mini cheeseballs.

For the stems of these pumpkins, I used thin breadsticks that I drizzled with balsamic vinegar and toasted in the oven to deepen the color. A pretzel rod would also work nicely.

And that’s it. With all the cheeseballs plated, I set everything up using a long wood cutting board and a matching cake stand to add height. Crackers and breadsticks filled various containers, while produce from the farmers market provided more color and seasonal flare. Operation fall entertaining complete.

Ingredients

  • 1 package (8-ounce) cream cheese - softened
  • 1/2 cup sour cream
  • 2 tablespoons prepared horseradish
  • 1 cup finely shredded sharp cheddar cheese
  • 2 scallions - chopped
  • 6 slices bacon - cooked and chopped
  • About 1/2 cup Everything But the Bagel seasoning blend*
  • Bagel chips and/or crackers for serving

Instructions

  • In a bowl, mix together the cream cheese, sour cream, horseradish, cheddar cheese, scallions, and bacon. Form the mixture into a ball, wrap with plastic wrap, and chill for an hour.
  • Once the cheeseball has set, roll it into the Everything But the Bagel seasoning blend to evenly coat.
  • (To make your cheeseball resemble a pumpkin, add a real or faux pumpkin stem to the top. Then use the tip of a chopstick or the back of a butter knife to create grooves.)
  • Serve with bagel chips and crackers.

In case you missed them, last year I shared this Caramel Apple Cream Cheese Spread, and last week I made a Pumpkin Spice Cheesecake Dip. Today I’m rounding out the trio with a Salted Caramel Cheesecake Dip.

Of the three dips, this is the richest one in the best possible way. It’s incredible sweetness comes from marshmallow fluff and dulce de leche. For anyone who’s not familiar with it, dulce de leche is similar to caramel sauce but thicker and richer. It’s made with sweetened condensed milk or a combination of milk and sugar. I don’t recommend substituting one for the other.

How to Make Salted Caramel Cheesecake Dip:

To make the dip, cream cheese, marshmallow fluff, dulce de leche, and confections’ sugar are whipped together until smooth.

While that is delicious on its own, what makes this dip truly special is the topping. Chopped pecans, more dulce de leche, and a sprinkle of flake salt bring this recipe home.

To make the dulce de leche thin so that you can drizzle it, just pop it in the microwave for a few seconds. (You can also add a splash of milk to thin it more if needed.)

Also, please don’t skip the flake sea salt or substitute another kind of salt. As you probably know, salted caramel is almost as popular as pumpkin spice, and there’s a very good reason. The salt-sweet combination is like a party for your mouth. Using flake sea salt, rather than table salt or kosher salt, is important because its flavor is more delicate and complementary to the sweet.

Here's what you will need:
8 ounces cream cheese, softened
7 ounces marshmallow fluff
1/2 cup confectioners' sugar
2 tablespoons dulce de leche

Topping:
1/4 cup chopped pecans
2 tablespoons dulce de leche, warmed in the microwave
About 1 teaspoon sea salt flakes*
Sliced apples and pears and assorted cookies for serving

Using a stand or hand mixer, mix together the cream cheese, marshmallow fluff, confectioners' sugar, and dulce de leche until combined. Transfer to a serving bowl**.

Top with chopped pecans, drizzle with warmed dulce de leche, and sprinkle with salt flakes.

Serve chilled with sliced apples and pears and assorted cookies.

*Please do not use table or kosher salt as it will not yield the same result.

**I recommend using a shallow dish so there is a lot of surface area for all the toppings. If you do use a deeper bowl, I suggest adding more pecans, dulce de leche, and salt flakes once half of the dip is gone.

As you know, hitting up the local farmers markets in Pittsburgh has been one of my greatest joys these past few months! The bounty of fresh fruits and vegetables (and other goodies) has inspired a number of new recipes, including this Rustic Peach and Almond Crostata.

If you’re new to baking, don’t let the title intimidate you. It’s not nearly as complicated as it might sound. A crostata is a lot like a pie but much more forgiving and not nearly so fancy. And you don’t need a pie pan. You just fold over the edges of the pastry to trap whatever filling you decide to use. In this recipe, we’re using almonds and peaches, but you can use whatever you’d like. In fact, I’ve shared recipes for a Blackberry and Apple Crostata, too. As you can imagine, there are endless options.

The first thing you will need is pie dough. You can find my go-to recipe here or use your favorite. Pie dough can be a bit tricky to make at first, but once you understand how the dough should feel, you’ll be good to go. (I like homemade dough, but feel free to use store-bought if you prefer.)

I rolled the dough out in a circle and placed it on a parchment-lined baking sheet. Next, I sprinkled the crust with a mixture of ground almonds, sugar, lemon zest, and egg yolk. When making a crostata, it’s a good idea to layer something (even plain flour) on the dough to help absorb some of the juice from the filling. This keeps the crust from becoming soggy. For this recipe, I used ground almonds because they add a flavorful crunch and complement the peaches.

Speaking of peaches, they are next! Before adding them to the dough, I gently tossed them with brown sugar to make them even sweeter.

For the final step, the dough is simply folded over to hold in all of that sun-ripened summer fruit flavor. This is the part I love most about making a crostata. The rustic imperfection is part of the appeal of this delectable dessert.

Rustic Peach and Almond Crostata

Serves 8

Here's what you will need:
1/2 batch IBC's Go-To Pie Crust (find the recipe HERE)
3/4 cup whole almonds, toasted and then finely ground
1/4 cup sugar
1/3 teaspoon lemon zest
1 egg (yolk and white separated)
4 large peaches, pitted and sliced
3 tablespoons brown sugar
1 tablespoon unsalted butter
1 teaspoon coarse sugar

On a lightly floured surface, roll out the dough into a 12- to 14-inch circle about 1/8-inch thick. Line a baking sheet with parchment paper and transfer the dough to the baking sheet.

In a small bowl, stir together the ground almonds, 1/4 cup sugar, lemon zest, and egg yolk. (Reserve the egg white.) Spread this almond mixture in the center of the prepared dough, leaving a 4- to 5-inch border of dough.

In a large bowl, toss the peaches with brown sugar. Then, pour the mixture onto the center of the dough, spreading it out evenly to cover the almond mixture. Fold the edge of the dough up and over the piece, pleating it as you go and leaving the crostata uncovered in the center. Dot the top of the peaches with butter. Refrigerate the dough about 30 minutes until it is firm.

In the meantime, preheat your oven to 400 degrees F.

Before baking, brush the dough with the reserved egg white and then sprinkle it lightly with coarse sugar.

Bake the crostata 50-60 minutes until the crust is golden brown and the peaches are tender. Transfer the crostata to a wire rack and let it cool for 20 minutes before serving.

The flaky layers of the puff pastry make this dessert a treat to remember and a recipe your friends and family with be asking for. In-season apples combined with tart cranberries celebrate the flavors of the season. It’s good stuff, my friends, and it doesn’t get much easier.

Apple-Cranberry Slab Pie

Serves 16

Here's what you will need:
2 1/2 pounds apples, peeled, cored, and thinly sliced (about 7 cups) I used a mix of Granny Smith and Honeycrisp.
1 cup dried cranberries
2/3 cup sugar
1/4 cup all-purpose flour
1 teaspoon ground cinnamon
1 17.3 ounce package frozen puff pastry (2 sheets), thawed
1/4 cup unsalted butter, cubed
About 3 tablespoons milk
Coarse sugar (for sprinkling on the top crust)

2 cups confectioners' sugar
1/4 cup unsalted butter, melted
4 - 5 teaspoons milk
1 teaspoon vanilla extract
1/2 teaspoon salt

Begin by preheating your oven to 375 degrees F. Lightly grease a 15x10-inch baking sheet. In a large bowl, stir together the sliced apples, cranberries, sugar, flour, and cinnamon. Set aside.

On a lightly floured surface, unfold one pastry sheet. Roll the pastry into a 16x11-inch rectangle. Transfer it to the prepared baking sheet. Spread filling over the pastry to within an inch of the edges. Evenly dot the filling with cubed butter.

Unfold the second pastry sheet; roll into a 15X10 rectangle. Place this pastry on top of the filling. Brush the edge of the bottom pastry with milk. Fold the bottom pastry over the top and gently press the edges together with a fork to seal.

Using a sharp knife, cut slits into the top pastry. Brush lightly with milk and sprinkle with coarse sugar.

Bake 50-55 minutes or until the filling is bubbly and the pastry is puffed and golden. If needed, to prevent overbrowning, cover the pie loosely with foil for the last 10-15 minutes of baking.

While the slab pie cools, prepare the butter icing. In a bowl, whisk together the confectioners' sugar, melted butter, vanilla, and salt. Stir in enough milk to reach a drizzling consistency.

Drizzle the icing over the pastry once it's cooled. Slice and serve.

Once you give this recipe a try, experiment with other pie fillings for a virtually endless variety of super-simple slab pies. Just know that I take zero responsibly for any pie-related weight gain. – However, winter is coming, so a little extra warmth probably won’t hurt any of us.

My Apartment Dining Room - ideas for decorating a dining room in an apartment.

I’m calling it my dining “room,” but dining “area” might be more accurate, if you know what I mean. Whatever name we use for it, today I’m going to give you a look at how it’s finally coming together.

My Apartment Dining Room:

It seems like I’ve been waiting to share this space in my apartment with you forever. The dining table that I originally ordered (in the same style as the one you see) was damaged when it arrived back in early July. When I went to reorder it, it was backordered. Whomp. Whomp. However, it’s finally here and set up, and I’m super thrilled with it.

I kept waffling about what table and chair combo I wanted for this space. I was leaning toward the table you see here, but I was hesitant to get it because it has become the “it” table over the past year. As I mentioned before, I’ve been trying to avoid “trendy” pieces as I decorate and furnish my new space.

However, after doing hours of research and eliminating many tables because they were too large, this one turned out to be the best choice for me. (This table is available through a variety of online retailers; I ordered mine from LexMod.)

This dining area is part of an open concept space in my apartment. In the picture below, my kitchen is to the right and and I’m standing in my living room to take the picture. This space is rather long, so I needed a table in a size and shape that would not overwhelm the space.

Again, after lots of measuring and debating with myself, I decided that a round table around 40 inches in diameter would probably be best. I also knew that I wanted to have a wood element to warm things up and that it could be on the table or the chairs.

Having selected the table, I chose these walnut bistro/cafe-style chairs. I think they fit the space perfectly.

Unfortunately, I don’t have a source to share for these chairs. Getting these chairs was challenging, and the place I ordered them from was difficult to work with. However, after I purchased my chairs, I did find something similar here on Rejuvenation. The main difference is the spindles on the back of the chair. I hope that helps.

The fiddle leaf fig tree is real. I found it at a local shop called Farm & Forest. Thankfully it’s doing very well thanks to all the natural sunlight.

The pot was a HomeGoods find. Originally priced at $60, I got it on clearance for $25. Score!

So that’s it, friends. You’ve seen my new dining room. While I certainly will miss the big barn table I have in St. Marys, I already have a few table setting posts in the works for the coming season. It will be a fun challenge to decorate this new space and table for entertaining. I’m excited to share more.

Pumpkin Spice Cheesecake Dip - a delicious pumpkin spice fruit and apple dip perfect for a fall dessert.

We all need an arsenal of recipes for seasonal celebrations. This Pumpkin Spice Cheesecake Dip will become one of your new favorites for fall entertaining. Whipped cream, cream cheese, pumpkin, and a healthy dose of seasonal spices will make this sweet dip a winner time and time again.

Last year I made this Caramel Apple Cream Cheese Spread, and y’all went crazy for it. (Okay, I know I don’t live in the South, but I really wanted to say “Y’all.” I hope you don’t mind. I blame Pizzazzerie and Southern FATTY.) Anyway, following up on the success of that delightful Caramel Apple Cream Cheese Spread, I thought you might like a couple more recipes that serve the same purpose.

Naturally, a pumpkin variation was high on my list. After playing around with a few similar recipes I found online and in magazines, this is what I came up with.

The notable difference between my recipe and many others is my generous use of seasonal spices. As I’ve mentioned numerous times here on IBC, when you’re baking with pumpkin, the key to bold pumpkin flavor is the spices. Don’t believe me? Remember when Starbucks used to make their famous Pumpkin Spice Latte, but there actually wasn’t any pumpkin in it? It’s all about the spices!! Take a look at any of my pumpkin recipes, and you’ll always see the same things: pumpkin pie spice, cinnamon, ground cloves, ground nutmeg, and possibly ground ginger.

Another thing that I love about this recipe is that it’s not in-your-face sweet. Because its base is whipped cream, it stays light and fluffy. However, it still has great tang thanks to the cream cheese. (I’ll be sharing a richer cheesecake dip next week.)

I recommend serving this dip with apple slices, pear slices, grapes, shortbread cookies, and graham crackers. All would be equally delicious. You could even get creative and turn this recipe into a trifle of sorts by layering it with pound cake, cubed apples, and a drizzle of caramel or butterscotch sauce.

Regardless of how you serve it, I think you’re going to love it!

Pumpkin Spice Cheesecake Dip

Here's what you will need:
1 cup heavy whipping cream
8 ounces cream cheese, softened
1/4 cup confectioners' sugar
1 cup pumpkin puree
1/4 cup brown sugar
1 teaspoon pumpkin pie spice
1 teaspoon cinnamon
1/8 teaspoon ground cloves
1/8 teaspoon ground nutmeg
Sprinkle of cinnamon to garnish
Apple and pear slices, grapes, and/or cookies for serving

In a stand mixer with the whisk attachment, whip heavy cream and confectioners' sugar about 5 minutes until light and fluffy. Transfer to a large bowl.

Then, with a paddle attachment, beat the cream cheese until smooth. Add the whipped cream and beat on medium for 2-3 minutes until light and fluffy. Scrape the sides and bottom of the bowl as needed.

To the mixing bowl, add the pumpkin puree, brown sugar, and spices. Mix on low to medium speed until well combined. Again, scrape the sides and bottom of the bowl if needed.

Transfer to a serving bowl and lightly dust with cinnamon. Serve chilled with sliced apples and pears, grapes, cookies, and/or graham crackers.

You can probably whip this up in under 15 minutes. It may take a few extra minutes to slice the apples, but overall it’s a super quick recipe with great results.

I saw this cocktail on a menu a few months ago and have been dying to give it try. I wasn’t quite sure what the restaurant used to make its version, but as soon I read the name, a few ingredient ideas were dancing in my head. After a bit of testing, I’m pleased to tell you that the resulting libation is quite delicious.

The base of the cocktail is watermelon juice muddled with fresh basil. To achieve this, you mash up a few pieces of watermelon with a couple basil leaves and then strain it to remove the pulp and seeds. What you end up with is a delicious juice that tastes like a summer melon with just a hint of basil.

To make sure the watermelon basil flavor stood out in this cocktail, I relied on vodka for the main liquor. (When you’re making any martini, go with a top shelf vodka for the best results. As of late, my brand of choice is Tito’s.) In addition to the vodka, I used one of my favorites: St. Germain. This sweet liqueur, with flavors reminiscent of pear and lychee, perfectly complements everything else that’s happening in this martini. – If you prefer your cocktails on the sweeter side, feel free to add an extra splash when you’re shaking up your martini.

Ingredients

  • 1 cup fresh watermelon - chopped
  • 2 large basil leaves
  • 2.5 ounces vodka
  • 1 ounce St. Germain Liqueur
  • small watermelon slice and basil leaf for garnish

Instructions

  • In a large glass, muddle the watermelon with two basil leaves to release as much juice as possible. Strain through a fine sieve and reserve the juice.
  • To a cocktail shaker filled with ice, add 2.5 ounces of the watermelon juice, vodka, and St. Germain. Shake vigorously. Strain into a martini glass and garnish with a watermelon slice and basil leaf.

Favorite Fall Decor Ideas | Inspired by Charm

Like it or not, fall is fast approaching. In fact, a week from today is September 1. To unofficially kick off fall here on IBC, I thought we’d take a look back at some of my favorite fall home decor ideas. Whether you’re ready for a change of seasons right about now or want to hold on to summer a while longer, I hope you find some seasonal inspiration.

For me, BLTs might be one of the best sandwiches out there. They taste even better this time of year because tomatoes are in season and bursting with sun-ripened flavor. With BLTs on my brain, I decided to take them to the next level by turning them into an appetizer and throwing an avocado-pesto into the mix.

If you’re looking for a tasty appetizer that’s fairly easy to put together and suitable for almost any occasion, this is it. Not only is the flavor combination on point, but it’s wrapped in bacon. What’s not to love?

To make these bites, I recommend starting with my recipe for Brown Sugar Bacon. (You can grab that recipe here.) I find it the best way to prepare bacon because it adds a bit of sweetness and keeps the bacon from getting overly crispy. The latter is especially important in this recipe because you need to wrap the bacon around the tomato when assembling the bites. Pan frying bacon is likely to make it too crisp.

With your bacon ready, combine the avocado, cream cheese, basil pesto, and a splash of lemon juice. This sauce adds flavor and pep to the bites. (It also makes them super trendy given that avocado is all the rage these days.)

These Avocado-Pesto BLT Bites make the perfect appetizer for any party.

Cut each bacon slice into three equal pieces. Then, with the avocado-pesto in a piping bag, pipe a line onto the bacon. Next, put on a few pieces of baby arugula. (You can use any green you like, but I prefer the pepperiness of arugula.) Finally, add a tomato and secure everything around the tomato with a toothpick.

Appetizer complete.

While assembling the bites takes a little time, it goes pretty quickly. Of course, the resulting goodness is worth it.

Avocado-Pesto BLT Bites

Makes 48

Here’s what you will need:
16 strips thick cut bacon, cooked*
½ medium avocado, peeled, pitted, and chopped
2 ounces cream cheese, softened
2 tablespoons basil pesto
1 teaspoon lemon juice
4 cups baby arugula
48 cherry tomatoes
Toothpicks

Begin by cutting each slice of cooked bacon into three equal pieces. Set aside.

In a medium bowl, use a fork to thoroughly mash together the avocado, cream cheese, pesto, and lemon juice. Put the mixture into a piping bag or plastic baggie. Cut off one corner of the baggie with scissors.

Assemble each bite by piping a line of the avocado-pesto mixture onto a strip of bacon. Top with 2 or 3 leaves of arugula and a cherry tomato. Secure the bacon and arugula around the tomato with a toothpick. Repeat for all of the bites.

*For best results, get my recipe for brown sugar bacon here. The bacon should be fully-cooked but not crispy.

Although I’ve always been a fan of Miley’s music, I so appreciate her new direction.

Inspired by all of this and the beautiful last days of summer, I’m calling this new Tuesday Tunes playlist Cool for the Summer. It’s a fun and happy mix of pop songs that put a groove in my step and shimmy in my booty.

After an embarrassingly unproductive work week, I redeemed myself in the kitchen this past weekend. Although I did get away for some bocce watching and authentic cuisine at Little Italy Days in Bloomfield, PGH, most of my time was spent testing new recipes and photographing the results. I can’t wait to share all of the yumminess with you on IBC.

One of the recipes I whipped up was this salad. It’s loaded with toasted baguette, radicchio, red leaf lettuce, pancetta, and blue cheese. So many of my favorites in one delicious dish.

What I also love about this salad is that it’s a quick side for any meal, yet it feels kind of fancy. By taking the time to cook the pancetta and toast the bread (which honestly comes together pretty quickly), this salad instantly feels more special.

If desired, you could turn this salad into a meal by adding grilled chicken or steak. The bread will soak in all those flavorful juices from the meat. You can’t go wrong whichever way you fix it.

Oh, and feel free to make some substitutions if you wish. I know that everyone doesn’t like blue cheese. Try gorgonzola. It’s milder. Goat cheese would also work.

Ingredients

  • 4 ounces pancetta - diced
  • 3 cups cubed baguette
  • 1 head radicchio - chopped
  • 4 cups roughly chopped red lettuce
  • 1 cup crumbled blue cheese - or gorgonzola
  • 4 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions

  • In a skillet, cook the pancetta over medium heat until crispy – about 10 minutes. Transfer to a paper towel-lined plate.
  • Cook the bread in the skillet drippings over medium-high heat for about 10 minutes. Stir until toasted.
  • In a large bowl, toss together the radicchio, red lettuce, blue cheese, pancetta, and toasted baguette. Drizzle with olive oil and balsamic vinegar. Toss to coat. Season with salt and pepper to taste.

Whether you call them roll-ups or pinwheels, these flavor-packed swirly bites have become a party classic. In fact, I’ve shared two other recipes (Cheddar Bacon Ranch Pinwheels and Italian Sub Sandwich Roll-Ups) that quickly became two extremely popular recipes here on IBC.

What I especially like about roll-ups is that they are easy to prepare. You can also make them in almost any flavor imaginable, and they are great for parties because they are a no-mess, one-bite treat.

How-t0 Make Buffalo Chicken Roll-Ups:

For these Buffalo Chicken Roll-Ups, you need to start with cooked chicken breast. My favorite way to cook chicken breasts (as taught by queen Ina Garten) is to roast them in the oven. Just drizzle the chicken with olive oil and sprinkle with salt and pepper. Then bake at 350 degrees F until cooked through. This is a super easy method that keeps the meat flavorful and moist.

  • Refrigerate the tortillas about 2 hours.
  • Slice each tortilla roll into 8 slices. Discard (or snack on) the two end pieces.
  • Serve immediately or cover with plastic wrap and return to the refrigerator until ready to serve.

Over the past couple weeks, I’ve been slowly showing you more of my home in Pittsburgh. Decorating this new space has been such a fun process. I hope you enjoy watching these spaces unfold as much as I am. Today we’re returning to my living room so you can see how I’ve started to pull together the opposite side of the room.

So, let’s talk about the media console – although it’s a sideboard. according to Crate & Barrel. Whatever it’s called, I knew this was “the piece” for a couple reasons. First, black console bridges my living room and the dark cabinets in my kitchen.

Secondly, and maybe most importantly, I’m crazy about this piece. I’ve seen it a couple of times in several interior design layouts, and it caught my attention each time. The glass door fronts will allow me to have fun with decor items, or I can use baskets for hidden storage and texture. Win. Win.

Right now, the console is sparsely decorated, but I did bring in a few key accessories, including, a modern brass and marble globe table lamp. I love how the lamp looks with other elements in the room.

I also found this five-feet-tall cactus. I couldn’t say no to it because it adds great color, movement, and a touch of quirky to this space.

Oh, and I also swapped out a throw pillow on the couch for one I had ordered way back in May when I was in NYC. It was on back order forever. I’m loving it!

Now, there are still a few more things I want to do in this space and some others I’m on the fence about. Let me walk you through my thoughts:

1. A rug. It was actually just delivered after I shot these photos, so stay tuned for that.

2. I might paint the wall behind the TV. (In fact, I’ve thought about painting the entire apartment as I greatly dislike these builder beige walls. I’d rather have white, however, I’m not sure it’s worth it since I’ll have to repaint them beige when I move out.)

3. The white box to the right of the TV is where my HVAC unit is located. Should I simply ignore it or should I attempt to “hide” it? I feel like trying to camouflage it might make it stand out more.

4. I’m also considering adding shelving to the left of the cactus. It doesn’t show in any of these photos, but I have about four feet to work with. I’m not sure if I truly need shelves or if they would just be an invitation to clutter. Art may be a better choice.

5. I’d still like to get new end tables and lamps.

6. I’m not sure what it would be, but I would like to add extra seating opposite the green chair. Maybe some stools like these or these? Or a bench? Or another side chair?

7. Finally, I’m also wondering about curtains. I’m on the fence about them, but my guess is they would make the whole place feel cozier.

I will be the first to admit that I’m not the most organized person. I like to blame it on my creative bent. Typically, when I’m in the process of designing or making something, supplies are everywhere, things get glued to the table, and paint is splattered in all sorts of places. 1. Make Your Bed
Raise your hand if you typically don’t make your bed when you get up. (Michael raises his hand.) I know this might sound silly, but taking a few minutes to make your bed when you get out of it can set the tone for your entire day.

Imagine accomplishing that one task within 5 minutes of waking up. It will give you a sense of pride, and encourage you to do another task and another, and so on. By the end of the day, that one completed task will have turned into many.

2. Use a Planner
I just turned 34, and I have yet to find a planner I absolutely love. (Trust me, I’ve probably tried them all.) What eventually happens is that I revert to a notebook of some sort, and all my plans and schedules get lost amid the pages. A notebook works to a certain degree, but it’s definitely not well-organized. So, recently I picked up yet another new planner (which I can talk more about in another post if you’re interested), but this time I’m approaching it with a different attitude.

While a certain planner may be a good fit for a particular style of planning, at the end of the day, they’re all pretty much the same. I think the real issue (for me at least) is being consistent in using whatever planner I get. Because of this, I’m committing to spend at least 5 minutes every day in my planner. Why? Because as someone said, “If you fail to plan, you plan to fail.”

3. Clean As You Go
When I was working in the kitchen back in hospitality school, one of my instructors frequently reminded us to “Clean as you go” or as he liked to say, “K Go.” Although I’m not always good about following this advice, it has stuck with me because I believe it’s truly important for staying organized.

When you’re working on a project or whipping up something in the kitchen, take the time to clean up along the way. Taking care of little messes one by one is much easier than tackling a sink full of dishes, messy cutting boards, and dirty prep bowls once you’re finished eating. Sure, it may take a little longer to get the food to the table, but it will speed the clean up after the meal is finished and all you want to do is chill on the sofa.

4. A Place for Everything
Having a place for everything is another way to make cleaning up and staying organized easier. Take your office supplies for example. Instead of storing paper, pens, batteries, scissors, and tape in random locations, designate a specific drawer or area for each item. When it’s time to put things away, you won’t have to think about where to store them if they already have a “home.”

This also saves time and reduces your stress. How much time have you spent looking for your car keys or cell phone? I’ve been there.

In my entryway. I’ve set up a table. Now, every time I come through the door, I take 10 seconds to toss my keys, wallet, and sunglass, into a bowl on the table. That way, when I’m ready to head back out, I know exactly where everything is, and I don’t waste precious minutes hunting everything down.

5. Buy What You Need and Donate and Trash Regularly
By having things organized and in their proper place, you can avoid overbuying. I’ll be the first to admit I’ve purchased things twice (or even three times) because I forgot where I put an item and didn’t want to take the time to look for it. This is obviously a waste of money and a recipe for clutter. (Without fail, that thing you couldn’t find or bother to search for will magically show up the next day.)

I also recommend making shopping lists. And, more importantly, sticking to them. I’ve often felt buyer’s remorse after shopping because I bought things I didn’t need and probably wouldn’t use. As much as you can, stick to your list so you can avoid accumulating excess stuff.

Also, take time throughout the year to donate extra items and trash unusable things you no longer need. If you take a few minutes here and there to do this, you won’t be faced with an overwhelming task at a later date (which will inevitably get put off until the last possible second).
