In the bowl of a stand mixer (or using a hand mixer), cream the shortening and sugar until light and fluffy. Beat in the eggs, one at a time, mixing well after each addition. Then, add the vanilla extract.
In a medium bowl, sift together the flour, baking powder, and salt. In a small bowl, mix the baking soda into the buttermilk until well combined.
Alternately add the dry ingredients and buttermilk to the sugar and shortening mixture, mixing after each addition until just combined.
Drop large spoonfuls onto a parchment-lined baking sheet (12 to a sheet) and sprinkle with coarse sugar or sprinkles. Bake for about 13 minutes or until the sugar cakes are slightly brown around the edges.
Transfer to a cooling rack and allow to cool completely. Once cooled, store in an airtight container.
