Ripe tomatoes, creamy mozzarella, fresh basil, and roasted chicken come together to create this impressive Chicken Caprese Pasta Salad recipe inspired by one of my favorite Italian dishes.


  • 12 ounces cooked pasta - (I used farfalle)
  • 2 cups halved cherry tomatoes
  • 1 cup julienned fresh basil
  • 1 1/2 cups cubed cooked chicken breasts
  • 8 ounces mozzarella - cubed
Balsamic Dressing:


  • In a large bowl, combine the cooked pasta, tomatoes, basil, chicken, and mozzarella.
  • In a small bowl, whisk together the olive oil, balsamic vinegar, sugar, salt, pepper, thyme, and oregano.
  • Add the dressing to the pasta mixture and toss to evenly coat. Chill for 1-2 hours before serving.
