To prepare the pancake batter, add buttermilk, milk, egg, melted butter, and vanilla extract to a medium bowl. Whisk together to combine. Add one cup of the prepared dry mix. Stir until just combined. Let the mixture sit for one to two minutes before cooking.
Just before cooking, gently fold in the chopped Oreos.
Set the griddle on medium-low heat. Brush the griddle with butter and allow the butter to melt. (Optional: Remove excess butter with a paper towel.)
Pour one-fourth cup* of the batter onto the hot buttered griddle. Cook each pancake until bubbles form on the top and the bottom is golden. (This will take four to five minutes.) Flip the pancakes and cook for about two more minutes until golden.
Serve the Oreo pancakes topped with maple syrup, whipped cream, and more roughly chopped Oreo cookies.
Notes
*For this recipe, I’m using my homemade pancake mix (which is delicious and so easy to make). You’re welcome to use store-bought or your own favorite mix. However, you will need to adjust the wet ingredients based on whatever mix you decide to use.
