Place the bread in the freezer for about 30 minutes before assembling the sandwiches. This helps to firm it up, making it easier to cut cleanly later.
Let the pimento cheese come to room temperature while the bread chills. Softened cheese will be much easier to spread without tearing the bread.
Once the bread is ready, lay out five slices. Layer each one with two slices of ham. Spread about 1/4 cup of pimento cheese over the ham, making sure to reach the edges. Top with the remaining slices of bread to form sandwiches.
