Start by setting your oven to 375°F. Line a large baking sheet with parchment paper and set it aside.
In a large bowl, whisk together the eggs, half-and-half, brown sugar, vanilla, cinnamon, and salt until well combined. Add the breadsticks to the bowl, gently turning them so each piece gets fully coated. Let the extra custard drip off before transferring the sticks to the prepared baking sheet.
Brush the tops of the breadsticks with half of the melted butter. Place the baking sheet in the oven and bake for about eight minutes or until the bottoms are lightly golden and starting to puff.
Take the baking sheet out of the oven, carefully flip each stick over, and brush the tops with the remaining melted butter. Pop them back into the oven and bake for another seven to eight minutes, until both sides are golden brown and the sticks are cooked through.
Once baked, move the French toast sticks onto a serving platter. Dust them with powdered sugar and serve warm with small bowls of pure maple syrup for dipping.
