These Chocolate Chip Caramel Cookie Bars are an easy, semi-homemade dessert made with refrigerated cookie dough, old fashioned oats, gooey caramel, and chocolate chips. With a soft, chewy texture and simple prep, this cookie bar recipe is perfect for parties, holidays, or anytime you need a quick and reliable dessert.
Preheat your oven to 350 degrees F. Line a 9-inch square baking pan with parchment paper and then lightly spray with baking spray. Set aside.
Add the cookie dough to a large mixing bowl and break it up using a wooden spoon or spatula until it softens slightly. Stir in the oats and a pinch of salt, mixing until everything is evenly combined.
Set aside about 1/2 cup of the dough mixture for later. Press the remaining dough evenly into the bottom of the prepared pan to form a crust.
Bake for about 10 to 12 minutes, just until the dough is set and lightly puffed. It shouldn’t be fully baked through at this stage.
While the crust is in the oven, stir together the flour, caramel topping, and vanilla in a small bowl until smooth and pourable.
Remove the pan from the oven and sprinkle the walnuts and chocolate chips evenly over the warm crust. Spoon or drizzle the caramel mixture over the top.
Take the reserved dough and crumble it over top.
Return the pan to the oven and bake for another 20 to 25 minutes, or until the top is golden and the center looks set.
Let the bars cool in the pan for about 10 minutes, then gently run a knife around the edges. Allow them to cool completely before slicing into squares so they hold together nicely.
