These Berry Compote Yogurt Parfaits prove that simple ingredients can come together to make something lovely. With just a few minutes on the stove, you’ll have a sweet berry compote that takes yogurt and granola to the next level. They’re great for breakfast, snacks, or even light desserts.
1½cupmixed berriessuch as strawberries, blueberries, raspberries, or blackberries
1tablespoonmaple syrupor another sweetener of your choice
Juice of ½ a lemon
Parfaits:
Your favorite yogurtplain, vanilla, or flavored
Granola of your choice
Instructions
Add the berries and lemon juice to a small saucepan and set over medium heat. Cook for three to four minutes, stirring occasionally, until the berries begin to release their juices.
Once the mixture starts to bubble, lower the heat slightly and let it simmer for another two to three minutes. Use a spoon or fork to gently press the berries and help them break down a bit. You want them soft and juicy, but not completely mashed.
Stir in the maple syrup and adjust to taste, adding more syrup or lemon juice if needed. Remove from the heat and allow the compote to cool completely before assembling the parfaits.
To assemble, spoon a layer of yogurt into the bottom of a glass or jar. Add a spoonful of the cooled berry compote, followed by a layer of granola. Repeat the layers until the glass is full. Serve immediately or store in the fridge until ready to enjoy.
