Ingredients
1cupquinoa
3ouncesarugula / mixed greens
¾lbcooked chickenshredded (3 cups)
1cupcrumbled goat cheeseor feta - I used honey goat cheese
½cuppickled red onions*quick and easy recipe in notes
Prepare the quinoa according to the package directions. Transfer to a large bowl and let cool to room temperature. Toss with the arugula / mixed greens.
Add this mixture to a large platter or bowl. Top with the chicken, goat cheese, red onions, strawberries, avocado, and sliced almonds.
Just before serving, drizzle with the strawberry poppyseed dressing and toss gently to combine.

Pickled Red OnionsIn a small microwave-safe bowl, microwave 1 cup red wine vinegar with ¼ cup sugar on high for two minutes. Stir to combine. Then add 1 cup thinly sliced red onions to the mixture. Let this cool to room temperature (about 30 minutes). Refrigerate in an airtight container. These remain fresh for up to one week.
