Instructions
Begin by preheating your oven to 325 degrees F.
In a small bowl, whisk together the nutritional yeast, Italian seasoning, salt, garlic powder, and onion powder. Set aside.
To a medium bowl, add the cashews, almonds, and walnuts. Mix to combine.
Drizzle the mixed nuts with the olive oil, then sprinkle with the seasoning mix. Stir to evenly coat/combine.
Spread this mixture onto a parchment-lined cookie sheet. Bake for 10-12 minutes. Remove and allow to cool.
Add in the sun-dried tomatoes. Stir to combine.
Pack and store in an airtight container.
Notes
For this recipe, you want the dry sun-dried tomatoes that are typically packaged in a bag (such as THESE). You do not want the oil-packed version.
