If you’re looking for an easy-to-make and scrumptious dessert that will satisfy your sweet tooth, then this strawberry crumble recipe is for you! Made with juicy strawberries and a divine crumble topping, this dessert is sure to become your go-to. Topped off with a scoop of vanilla ice cream, each bite will leave you craving more.
Begin by preheating your oven to 375 degrees F. Spray a 2-quart baking dish (roughly 8x10) with baking spray and set aside.
In a large bowl add strawberries. Sprinkle the strawberries with sugar, cornstarch, and cinnamon. Stir to combine.
In a separate bowl, combine the flour, steel-cut oats, sugar, baking powder, and salt. Whisk to combine.
Grate in frozen butter, stopping occasionally to toss the butter into the flour mixture until coated. (You can also just cut the butter into small cubes with a knife.)
Stir in egg yolks and vanilla with a fork until the egg is mostly absorbed. Add the vinegar and start to mix to combine.
To finish mixing, it’s best to use your hands. Mix and squeeze until clumps form but the mixture remains mostly dry. Set this aside.
Place about half of the crumble mixture into the bottom of your prepared baking dish. Press the mixture evenly into the bottom of the dish until well compacted.
Next, pour on the strawberry mixture.
Sprinkle the remaining crumble mixture over the strawberries, squeezing some of the crumble into clumps.
Bake for about 40 to 45 minutes or until the top is brown and the filling is bubbly. (You may need to set a piece of aluminum foil on top of your dish if the top is browning too quickly.)
Let cool to room temperature before serving, about 30 minutes. Top with vanilla ice cream to serve.
