Breakfast Strata Cups
Made with bread, eggs, sausage, cheese, and fresh veggies, these Breakfast Strata Cups are individualized servings of a delicious and beautiful breakfast/brunch recipe that you can whip up in no time!

Ingredients
Egg Custard:
6
eggs
1/4
cup
heavy cream
1/4
teaspoon
dry mustard
1/4
teaspoon
Italian herbs
pinch
salt and pepper
Filling:
2
cups
cubed Italian or French bread
1/2
pound
ground pork sausage
cooked
1/3
cup
shredded cheddar cheese
1/3
cup
chopped red pepper
2
green onions
chopped
chopped chives to garnish
Instructions
Begin by preheating your oven to 350 degrees F.
Spray four oven-safe ramekins with cooking spray.
Whisk together the egg custard. Set aside.
Fill each ramekin with your fillings. Mix to evenly distribute the ingredients.
Pour the egg batter evenly into each ramekin until about 3/4th of the way full. Place the filled ramekins onto a baking tray.
Bake for about 25 minutes or until puffed and golden brown.
Garnish with chopped chives and serve immediately.
Notes
My ramekins are 8 ounces each.
This recipe can be easily doubled or tripled to make additional strata cups.
While I used cheddar cheese, sausage, red pepper, and onion, you can use any combination of ingredients and toppings you like best.
