Hosting overnight guests? Well then, this recipe for Overnight Everything Bagel Breakfast Casserole is a must-have and better put, a must-make! It's full of delicious flavor, serves a crowd, and you can make it the night before so you can sleep in as late as your guests.
Begin by cutting the bagels into 1/2 - 1 inch cubes. Spray the bottom of a 9x13 baking dish with cooking spray, then add in the cubed bagel pieces. I used and recommend Dave's Killer Bread Epic Everything Bagels for this recipe. Their flavor and softness work really well for this dish.
Spread the cooked sausage over the bagels. Then, sprinkle with the cheese, chopped red bell pepper, and green onions. Mix slightly with your hands to combine. I've provided a full list of the ingredients and detailed recipe instructions in a printable recipe card below.
In a large bowl, add the eggs, half and half, dry mustard, salt, and pepper. Whisk to combine. Pour this mixture over the bagels and sausage.
Cover the dish with foil and refrigerate for 8 hours or overnight.
Before baking, preheat your oven to 350 degrees F.
Bake covered until set and lightly golden on top: about 60 minutes. (You can remove the foil for the last 10 minutes of baking for a nice golden top.) Remove from the oven and allow the casserole to set for about 15 minutes before serving. Sprinkle with chopped green onions to garnish.
