We're making my favorite Thanksgiving side dish: Mashed Butternut Squash. Roasted butternut squash mashed with butter, brown sugar, and spices added creates this delicious and seasonal side.

Cut the butternut squash in half length-wise, then use a large spoon to scoop out the seeds.
Place the butternut squash halves on a baking sheet cut side up, then brush with melted butter.
Bake for about 65-75 minutes or until the squash is tender. Remove from the oven rack and allow to cool enough to handle.
Scoop out the flesh from the squash and place it into a large bowl. Add the softened butter, brown sugar, and cinnamon. Mix with an electric mixer on low until smooth. Season with salt and pepper and mix to combine.
Serve hot.
