Begin by preheating the oven to 350 degrees F. Spray a 12 x 8-inch (2.5 quart) baking dish with baking spray. Set aside.
In a large bowl, whisk together the milk, heavy cream, eggs, brown sugar, applesauce, melted butter, and vanilla extract until smooth and well combined.
In a medium bowl, stir together the old fashioned oats, baking powder, salt, and apple pie spice.
Add the oat mixture to the egg mixture and stir to combine. Fold in the chopped apples, dried cranberries, chopped pecans, and orange zest. Transfer this to the prepared baking pan.
Bake for 45 to 50 minutes or until golden brown. If necessary, cover loosely with aluminum foil to prevent over-browning.
Serve with milk and pure maple syrup.
