One of my go-to's for breakfast is pancakes. And today I'm sharing my Homemade Pancake Mix recipe with you. Just whip up a batch of this dry mix every couple of months, and you'll be ready to make pancakes whenever your heart desires.
To prepare the pancake mix, add the flour, sugar, baking powder, baking soda, and salt to a large jar or container. Use a whisk to thoroughly combine all the ingredients. This pancake mix can be stored for up to three months.
To prepare the pancake batter, add the buttermilk, milk, egg, melted butter*, and vanilla extract to a medium bowl. Whisk together to combine. Add 1 cup of the prepared dry mix. Stir until just combined. Let the mixture sit for1-2 minutes before cooking.*allow the melted butter to cool a bit before adding.
Set your griddle on medium-low heat. Brush with butter. Allow the butter to melt. (Optional: Remove any excess butter with a paper towel.)
Pour 1/4 cup* of the batter onto the hot buttered griddle. Cook the pancake until bubbles form on the top and the bottom is golden. (This will take bout 4-5 minutes.) Flip the pancakes and cook about 2 more minutes until golden.
Serve with butter and pure maple syrup.
This recipe will make 10 pancakes with dry mix left over.

*1/4 cup of batter makes a 3-inch pancake. You can create a larger or smaller pancake by adjusting the amount of batter you use.
