This Beehive Cake is as cute as it is delicious. A honey bundt cake topped with a honey frosting and candy bees, this dessert recipe is a sweet and tasty showpiece.
Begin by preheating your oven to 325 degrees F. Grease and flour a bundt pan and set aside.
In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, and salt.
In the bowl of a stand mixer fitted with the paddle attachment, cream together the butter and brown sugar until fluffy. Then mix in the eggs, one at a time. Finally, mix in the honey and vanilla.
Gradually add the dry ingredients to the wet ingredients and mix until just combined. Finally, add the sour cream and beat until just combined.
Pour the batter into the prepared bundt pan and bake 55-65 minutes until a toothpick inserted in the center comes out clean. Allow to cool on a wire rack for about 15 minutes before inverting and removing from the pan to cool completely.
While the cake cools, prepare the honey frosting.
In the bowl of a stand mixer fitted with the paddle attachment, beat the cream cheese and butter on medium speed until smooth. Add the honey, vanilla, and salt and mix on low until combined. Finally, add the confectioners' sugar and beat until the frosting is light and fluffy.
To assemble as a beehive, cut the rounded domes off both halves of the cake with a serrated knife. This will create a flat surface on each half. Spread a layer of frosting on each cut side and put the two halves together. Top the bundt cake with additional honey frosting and sugar candy bees.
Notes
To make your frosting thinner, add a splash of milk. To thicken, add more powdered sugar, one tablespoon at a time until you achieve the desired consistancy.
