Shaved Brussels sprouts are tossed with pomegranate seeds, pecans, pears, parmesan cheese, and a light dressing to create this Winter Brussels Sprouts Salad. This is a healthy, easy-to-make side that pairs beautifully with any holiday or winter meal.
In a small bowl, whisk together the oil, vinegar, mustard, sugar, salt, and pepper.
Add the shaved Brussels sprouts to a large bowl.
Drizzle with about ½ cup of the dressing and toss to combine. Let rest for about 30 minutes.
Add the pecans, pear slices, shaved parmesan, and pomegranate seeds. Toss to combine.
Drizzle with the remaining dressing before serving.
Notes
This salad is best served the day of. You can buy pre-shaved Brussels sprouts. However, I find them to never be as good as freshly cut. While it does take extra time, I recommend buying whole and slicing them yourself.
