Begin by preheating your oven to 375 degrees F. Line two baking sheets with parchment paper. Set aside.
In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
In the bowl of a stand mixer, add the butter, peanut butter, granulated sugar, and brown sugar. Beat until light and creamy: about two to three minutes. Add the egg and vanilla extract and beat to combine. With the mixer on low, add the flour mixture and beat until just combined. Scrape down the bowl as needed.
Scoop out about one tablespoon of dough and roll it into a ball, then roll in sugar. Place the balls two inches apart on the prepared cookie sheets. Press your thumb into the center of each ball/cookie to indent.
Bake one cookie sheet at a time for about 8-10 minutes or until lightly browned. Remove from the oven and press one candy bar into the center of each cookie. Allow the cookies to cool on the baking sheet for a few minutes then transfer to a wire rack to cool completely.
