Classic Peach Bellinis are made with peach puree and topped with prosecco. A tradition that started in Venice, Italy is now a staple cocktail (often served at brunch) that can be enjoyed by many!

Place the peaches, lemon juice, and simple syrup in the bowl of a food processor fitted with a steel blade and process until smooth.
Transfer the purée* to a storage container.
Place 2 tablespoons of the peach puree into each glass and fill with cold prosecco.
Serve immediately.
Notes
*If desired, the puree can be passed through a mesh sieve to remove any solids.You can purchase simple syrup or make your own. Find my recipe HERE.Don't want to use simple syrup? Substitute with 1 teaspoon sugar, honey, or maple syrup. Adjust to your desired level of sweetness.
